If you're into or can get into L.A. jazz, anything by Larry Carlton is a must, especially his work in the 70's and early 80's. Lee Ritenour is a great guitarist, though rarely flashy, but he's had a few nice records as well.
Another overlooked player is Richie Kotzen (who's also an amazing singer). He's got a new band with Portnoy and Bad Billy Sheehan. It'll have vocals and be on the "commercial rock" side but it'll definitely feature some great playing.
