I think the 8Gb is too small. I tend to want all my music, apps, and videos at my disposable. I usually swap out my podcasts but if I don't get to listen to them they can build up and use up the storage too.

That's a good point. I forgot that 3GS was either 16 or 32. My advice is to buy the smaller capacity of the latest version (wait a month for 4G) unless you really want to carry an extensive media library around. When I bought mine, I picked the 16GB 3GS figuring that if I really want to carry a lot of music/movies around from time to time, I could use my old video iPod or use one of the apps that let's you stream from home.
On the other hand, if you're buying an iPhone, the one-time $100 charge to buy the higher capacity version is a relatively minor expense compared to the $720 you'll be paying for data service over the first 2 years of ownership (and another $360 per year every year after that).
