Depends what you're looking for in a racing game.

If you want simulation, Forza Motorsport 2 is probably the cream of the crop (though the AI is really weak).

For arcade racing, both Midnight Club L.A. and Burnout: Paradise are wonderful.

I rented Pure the other week (a 4-wheeler racing game) and found it a lot of fun.
