Your tactic to avoid them is the best: if the choke point gets no traffic, they will move. That is, if they are looking for kills. If they are looking to control a part of the map for their team however, their tactic has just defeated you.
My favorite "camping" spot is on Scrapyard: by point B, point A side just outside the door. A claymore at the door pointing out and one at the fence, plus Scavenger & hold the position = 20 easy kills per match.

I only play in "Free for All" so I don't know much about the strategy in those team games. I like to run and gun and hate running into a building to reload or to regain my health just to get shot by some camper in a dark corner.
