They'll all be signed up by tonight or within the next few hours pretty much if they're worth shit and have any real talent to actually play in the NFL. When I worked for Condon a few years ago, we targeted our undrafted players for which teams would be the best fit for the player & opportunity, and then basically would let the teams interested in the player battle it out for who wanted to pay the most signing bonus. Some players would take less money from teams simply if they preferred to go to a certain squad or thought they had a better shot to make the club.
