All of that is a direct result of prior jailbreak only functionality. I'm doing all of that, with a few limited exceptions, right now with jailbroken iOS5.
Apple would never admit it, but the jailbreak community provides as much innovation for their product as do their own engineers.

Android's the same way. In fact, probably even moreso given that they can just about pluck the code right out of a repository and plop it into their own versions.
