The cool thing about the Traeger (the one I know more about) is the automatic pellet feed. You buy a big bag of wood pellets (many flavors of wood to choose from) and you load them into the hopper and the auger feeds them into the heating mechanism automatically at a predetermined rate/speed so as to control the temp. With some of the extra add-ons it's almost idiot proof and it's practically set it and walk away. They have remote temp gauges so you can monitor the temp from inside the house too. Pellets are not cheap but not real pricey either.
