You have to turn off the autoupdate thing on your ipod.
If autoupdate is on, it will just copy the itunes library from the computer you are connected to and delete your previous music.
Once you turn the autoupdate off, just drag and drop your music from an itunes library to your ipod in itunes.
It may not be called autoupdate exactly, but that's how you do it.
