Completely up to you. Lots of vegetarians are actually pescatarians. There's also lacto/ovo. Then there's hard core vegan.
Hell, my wife is a vegetarian except for bacon, which she'll eat occasionally.

I'm going to make this change. The 40 days gives me a goal. I think that, by the time the 40 days is up, I won't even realize it's been 40 days. Giving myself that time will help keep me on track while I make the adjustment.

I'm not a vegetarian or a pescatarian, or any other label but my diet mostly consists of plant-based, whole foods. I don't eat fish all the time but I also don't limit it from my diet. When I am at a restaurant, in lieu of a vegetarian option, I'll generally order seafood over meat or poultry.
It's really not difficult. Some of my favorite vegetarian cook books (for quick & easy recipes with readily available ingredients) are:

I eat a lot of soups & stews. Be wary, though, when buying certain packaged ingredients (if you don't make your own broth/stock or don't cook your own beans) to look at the sodium content.
