As an alternative to clear the palette.............

I'm having about 50 Chief fans over to my house to watch the game down here in Florida. Here's the smoker one of our group is bringing.

Some details about the meat................

They start with the best meat that they can find. They will start prepping the meat as soon as they get it home.
They use a 7 step process to cook the ribs. They will be cooking 18 slabs of St.Louis style cuts of ribs. They trim up the slabs. They make their own rub for the meat and BBQ sauce. Their BBQ sauce is traditional vinegar based KC BBQ sauce. They will have a couple of bottles of Sweet Baby Rays for those who like the sweet sauce. They are also going to cook 80-90 pieces of chicken and 80 sausages.


The smoker is a custom built $10K reverse flow smoker. It has fryers and charcoal sides.
