Ah, yeah, thats what I figured you meant. Pretty much anything outside of Philly is a bastardized version. I'm surprised Scottsdale, AZ has almost an exact replica of a Pat's cheesesteak - it looks nearly identical, but with fancier bread.
Cheese whiz is where its at. Some use melted provolone, which is not bad either.
There is a restaurant in Philly that offers up a $100 cheesesteak as well. Sliced thin Kobe beef, truffles, taleggio cheese (creamy), and shallots. Sounds very tasty, but at $100...a bit pricey.
