The closest thing to what I want to do for the rest of my life is probably paleo, but that's only in the sense that I want to (permanently) restrict how much processed food I eat, and try to get to a point where I'm almost exclusively cooking for myself. Sugar and wheat in moderation, a lot of lean fish and fowl, a lot of vegetables and fruit. Of course it's a challenge even to do that much, after being conditioned for so many decades to eat all of the stuff that I enjoy the most.

I think I'm going to switch to Paleo once I hit my goal weight, but I won't ever eat refined sugar/bread/pasta/etc.
