No problem. Just let me know what questions you have. I have been doing it a long time. A koi pond can definitely be done but you won't get as much, if any plant life out of the pond. But if you are more interested in it for the fish aspect alone, not necessarily the entire experience of a water garden, then koi would be the way to go because they are larger and even more impressive in varieties and colors. Butterfly koi are very nice. You just have to be prepared to make a fairly large and deep pond. At least four feet deep in the center and around 8' x 10' at the absolute minimum on the surface area. And that is sticking with a small amount of fish.
On those goldfish, they can be purchased at a garden place like Family Tree Nursery. Where you are in Spring Hill, there is a place relatively close to you that also has fish available for purchase. They have pretty good prices too.
They also have plants for sale and many different elaborate water gardens set up. I highly recommend taking a visit there to help get some ideas as well as information. It is kind of just in a backyard but it is really cool. It is called Swan's Water Gardens.

So after reading their site I see they moved over the winter. So they may not have as much set up yet for ideas but their website does show some of the ones from the previous retail location.
The shubunkins are your blue based fish. They come in many varieties mixed with reds, oranges, and black.
The sarassa comets are the red and white mixes with varying degrees of more red or more white.
Then of course there are the regular orange comet goldfish.
