My wife is a vegetarian, and we rarely eat tofu. I agree that it's just not that good, and it's pretty unnecessary for most dishes. Tempeh is slightly better and seitan can be delicious.
A couple of dishes I actually like tofu in though: tofu pad thai (they fry it, and it turns it into little square morsels that actually have a crunchy exteior). Tofu tom ka soup as well. Just large chunks of steamed tofu floating in the soup. For some reason (I guess because the tofu soaks up the soup), it's delicious.
I, too, find it hilarious that our vegan buddy warns against alcohol's estrogenic effects but promotes soy.
