I'm tinkering more and more with the mods.
When Lydia looks like this, she's not nearly as annoying.
I also found a mod that allows followers to level up, so now her stats are basically at the same level as my character. Loaded out with Daedric armor and weapons, I really don't need to worry about her dying anymore.
