I will be in Denver next week for a conference, staying in downtown. What are some restaurants/bars/pubs that I should not miss?

I'll have some free time on Sunday and then after 5pm each day Monday - Thursday. Any museums/activities/venues that I should definitely check out?

I did not. However, I only had time to get through security and get on the plane (which was already boarding) on the way out.
