Last time in Vegas I was still trucking. And since the Strip and well for the most part NO city is very truck friendly as far as parking and getting to the "good" spots I'd say the old "Flying J" just off the strip, or the Desert Inn where I unloaded.
Kinda cool parking right by the front doors all day though.

O'Shea's right across the street from Margaritaville.Just a little dive with great drink specials,kick ass bands at night and even a midget who comes out on the bar and gives upside down drinks.

Love Diablos (in-between NY/NY and Monte Carlo....right on the strip).

Good food....great scenery....not outrageous prices....and one of the best views from a restaurant you'll find on the strip (2nd floor overlooks the strip, with a view of MGM, NY/NY, and the new Hard Rock restauraunt/bar/club straight across the street).

Fremont Street at the Slot arama has THE best 1 lb hotdogs. They are great and not very expensive

There is also a very great steak place inside the 4 queens on the Fremont strip.

The light show at night is awesome too

probably not gonna make downtown, but the steakhouse restaurant @ the top of binions is FANTASTIC!!!!

best ribeye that i've EVAH had! (3 separate trips, it's sooooo friggin' good).

And if you're needing a quick burger late night, the cafe in the basement of Binions is damn good. One of thee best bacon cheeseburgers I've ever had.

If you're really nuts about buffets, you can pay $36 for a 24 hour pass for all you can eat at the Rio, Harrahs, Ballys, caesars, imp palace (do NOT go here), Paris, NYNY, Planet Hollywood, flamingo, and any other harrahs owned resort. My fam and I did it. We ate breakfast at flamingo, lunch at planet h, and dinner at the rio....then we puked. It was a lot of food, but hey, it's Vegas.

This. Hugo's steakhouse inside 4queens is the best for the $$. Blows the one at Circus Circus away.
Firefly is cool. It's on Paradise just north of the Flamingo.
Double down is infamous. They use to show midget porn on the TVs, but the gaming board stopped that. They're no fun.
You can also check out Don't Tell Mamas on East Fremont/east of lv blvd. singing bartenders. It's fun.
Insert coin is right across the street and that's a fun bar with all kinds of video games. Very cool place.

I always eat at least once at the Bellagio buffet. I pretty much load up on the crab legs and other seafoods. And lots of desserts.
