You don't have to be different or unique, but it DOES help if you, as the owner/operator of an independent steak house, get to maintain tight quality control on the beef you use, and if you can get it within the state of Missouri or Kansas.

As opposed to having the good 'ol Sysco Truck pull up and drop off a pallet of semi-frozen nonsense from God knows where.

It's been 14 years so there's pretty much no chance of it still being true today, but the best steak I ever had in KC was, ironically enough, at the Colony Lobster Pot when they were in Westport.
Cooked medium-rare to perfection, and no knife required.

One good benefit about living in the mid west is that right now, if you've got a top-tier grocery store close by, you can waltz right in there at 2:30am and buy a choice cut of meat, the proper seasonings, and a bundle of hickory to cook it with all with for the price of, well...nothing!

Skip the the steak and go right to Garozzo's for the chicken spiedini.

It's amazing now that I don't live in KC...how much I miss the Italian restaurants there.

Man, good Japanese and Thai food kick the living shit out of Chinese, any day of the week.

It's the vegetables they use in conjunction with the rice/noodles. Crisp and sauteed sprouts, peppers, and onions with beef, chicken, or pork; that's what I had today for lunch at the one and only Thai joint in town.

Luckily, it's a great one. The wife of the owner is from Thailand, and she has her shit down.
