It's to control pollination. The tassels contain the pollen. Most farmers plant cheap normal strains of corn and put a row or two of really good high production strains of corn in the midst of all the normal strains of corn. You detassel the cheap normal corn plants so that the cheap strain of corn doesn't pollinate itself. You want the pollen to only come from the few rows of expensive high production strain of corn, and pollinate all the other varieties for a hybrid of much better yield.
