What's your favorite grilled cheese recipe?

I like mine with mayo, 2 or 3 kinds of cheese (I keep changing 'em) + thin sliced red or white onions on the best bread you can find. Cook 'em slow and low, in butter. I do this a lot! Except instead of red wine, I use good Canadian whiskey.

Oh, and I usually just skip the sandwich part too.
