How do you do stuffing?

In the spirit of Thanksgiving, let's skip past the turkey and talk about what everyone loves most - stuffing/dressing.

How do you do it?

I'll admit, until I started dating my wife, my entire experience with stuffing/dressing was Stove Top. I didn't mind, but now I know better. And for the last decade plus, I make mine homemade. Sometimes I use the pre-cubed (un-seasoned) bread, but mostly I'll make my own.

Mine is pretty basic. It's what Mrs. FMB's dad made, and what we like. I've made a few modifications, and I think mine's better, but it's still very basic.

I prefer to start by drying out the bread in the oven. Add some diced onion, celery, mushrooms, and minced garlic sauteed in butter, and toss with the bread. I'll season pretty aggressively with rosemary, thyme, sage, salt, and pepper. Then it all gets moistened with stock - I really try for homemade turkey stock, but sometimes I just use from the store. Bake it all up under foil, and then take the foil off and let the top get crispy.

Your wife's Italian right? My Italian dad never cared for turkey or my Yankee mom much. They both felt it was a meat that was just naturally "dry."

We never had it for Christmas like many other families. Nonna always made her homemade ravioli and sausage for everyone at Christmas. I do a prime rib for that holiday now.

No, I meant my Mom felt the same way about turkey. She always commented if a meat was dry in a restaurant even. Her favorite meat is ham or a pork shoulder.

you can absolutely cook a turkey that is moist and you do not have to brine it

getting a fresh turkey helps, but isnt necessary

using one of the oven roasting bag will help too...

if you have problems cooking turkey my advice would be to do those two things b4 coming to any (wrong) conclusions about turkeys

just remember a turkey in an oven roasting bag will come up to temp much faster so dont be surprised if it takes an hour or more off your turkey's cook time

and let it rest


when I was single and in the gym 24/7 me and my roomate lived off of turkeys..

We would get like a turkey a week and have sammys and soup all week,...or make casseroles...

Its great healthy protein.

When I was growing up, mom did a family recipe using bell's seasoning. Still the best I've ever had.

These day's, my parents always visit around Thanksgiving and we always do Hen House, rather than waste a day in the kitchen. Their stuffing is a usually a let down.

Mostly now it's Stove Top, on the rare occasion during the year where I decide to have turkey and dressing randomly. Stove Top and smoked turkey from Oklahoma Joe's.

My Mom used Bell's Seasoning growing up too. I liked it. Think I even have some buried in my spice shelf somewhere.
