I don't think it's hokum. I think Alton is sometimes guilty of being overly cautious. Given the number of Americans who've somehow managed to survive the eating of a stuffed turkey, I'm comfortable with the notion that this is one of those times.

you can absolutely cook a turkey that is moist and you do not have to brine it
getting a fresh turkey helps, but isnt necessary using one of the oven roasting bag will help too... if you have problems cooking turkey my advice would be to do those two things b4 coming to any (wrong) conclusions about turkeys just remember a turkey in an oven roasting bag will come up to temp much faster so dont be surprised if it takes an hour or more off your turkey's cook time and let it rest when I was single and in the gym 24/7 me and my roomate lived off of turkeys.. We would get like a turkey a week and have sammys and soup all week,...or make casseroles... Its great healthy protein.

When I was growing up, mom did a family recipe using bell's seasoning. Still the best I've ever had.
These day's, my parents always visit around Thanksgiving and we always do Hen House, rather than waste a day in the kitchen. Their stuffing is a usually a let down. Mostly now it's Stove Top, on the rare occasion during the year where I decide to have turkey and dressing randomly. Stove Top and smoked turkey from Oklahoma Joe's. |
