Ice Cream Bread

Gonna make this today.

Quote:
This is a very simple sweet bread. It sounds crazy, but yes, it really works! You can use any flavor of ice cream, just make sure it’s not low- or non-fat.

2 cups Ice Cream
1-½ cup Self-Rising Flour

Stir together ice cream and flour, stirring just until flour is moistened. Spoon batter into a greased and floured 8×4 inch loaf pan. Bake at 350 degrees for 40 to 45 minutes or until a wooden pick inserted in the center of the bread comes out clean. Remove from the pan, and cool on a wire rack.

It's bread, not a brownie. I wouldn't expect the flavor to be very pronounced.

Actually, there was a flavor in mine, but it wasn't pleasant. And what flavor was there was bland.

Banana and zucchini bread has flavor. I guess I expected it to taste sweet like they do.

So is the consensus that this is a noble but failed experiment?

Once again, beer + self-rising flour = Total win. Why mess with perfection?

Okay, the bread came out meh. My kids didn't like it. My wife earlier said about giving thanks on everything also gave a thumb down.

But this is a bread, not a brownie. Next time, I will put some more sugar to sweet it up. The texture is almost like a brownie, crunchy outside but soft inside.

Then our neighbor, a young couple, dropped by. The wife loved it. (maybe due to courtesy?)

Well, that's good.

Bread is perhaps my favorite food, and ice cream ranks very high as well. I'm just not convinced that they mix.

I hate to say it - but when you're creaming the ice cream w/ a mixer - i'd add some sugar - sounds like that's the problem.
