A stud in the agricultural sense is a horse that is used for breeding. The goal of breeding is to yield offspring that are healthy and strong. Therefore, the stud horse is typically the healthiest, strongest available.

The use of the word "stud" for a man is saying that he's a big, strong guy. And has sex with lots of women.
