Making Jerky / Everything BBQ Tips Thread
Any of you guys make Beef Jerky? I have made a lot of wild game jerky over the years, but I have never had an end product that was what I would call fantastic. I have used about every cut of meat you can think of to make it with as well.

I have a buddy who makes the best jerky I have ever had, I'm taking not ever close. After six years, I finally talked him out of the recipe. I'm going to fire up the smoker Saturday and make some. I'm trying to figure out the best bang for the buck cut of meat to make this with. I know I want something with as little fat as possible. What cut do you guys use when you're making jerky? I was thinking top round?

I decided to expand this thread a bit and turn it into a BBQ tips and technique thread as well so people could share their tips, recipes, BBQ techniques or whatever floats your boat in the "Q" department.

While I compete quite a few things, I don't know why but I can't stop myself from ordering ribs when I'm out. Other folks get a lot of the other things so I can sample them, but I always do the ribs. Yes, I'm often times let down, but then I remember there's a big difference between mass production and folks like us, when we're home, who sweat over a couple or three racks..

The one thing I WON'T do is smoke only one rack of ribs or one brisket... There's just something about the pollination or something. But it hurts the wallet and fattens the neighbors...

I just use different spices by hand. I don't do a mix up in one jar because the grain sizes vary, settling, etc...

It starts! A shot when it hit the smoker at 6 am. I have it rolling at 150 degrees right now, I'll check on it in another hour or so. I have no clue how long this is going to take, which is why I got it started early, any idea?

And if you're going to use a dehydrator, I'd go like 4 hours (wasting smoke after that), then move it inside... But it's rainy here, do it could take 48 hours.. But it may be dry there, so it'll prolly be a lot less...

But it sure does look good...
