MEATLOAF...what's in yers? [merica!]

Nothing screams 'Merica than some good OL fashion meatloaf...and that's what's on the menu at the Tomahawk household tonight.

But it got me thinking..everyone has their own spin on making meatloaf, what are some of your key ingredients?


I like to add bacon, sweet peppers, and extra honey mustard to mine.

To OP my mom would make the ground beef mix then use a rolling pin to flatten it a bit. Then she would put a layer of ham and then cheese on top of that. She would then roll it and tuck in ends. Meatloaf with melted ham and cheese inside. Mmmmmmm

Hated meat cake when I was growing up, but like this recipe. But I use the meatloaf meat mix they have at the store(ground veal, pork, & beef) not just ground beef.

Normal stuff and the wife adds some hidden valley ranch packets. A guy I work with adds chocolate protein powder. I couldn't taste a difference but he swears it's the real deal.

I use a mix of pork and beef. All the usual ingredients, Eggs, Worcestershire, eggs etc. but I smoke mine on the smoker. I don't use loaf pans either it goes on a pizza pan that has holes in it that keeps the fat from sitting in the pan. You get good carmelization all the way around and its not soggy on the bottom. We don't even do it in the oven anymore.

I make mine w/a mix of bulk italian sausage and ground beef, to the beef I add crushed red pepper flakes (pizza pepper), thyme, fennel seed. Then add fresh garlic and yellow onions chopped fine, an egg or 2, some oats or breadcrumbs. I mix all this up in a bowl, and press half into a meat loaf pan w/holes, that sits in another pan to catch the drippings. Then I sprinkle the meat layer w/black pepper and salt and lay on some provolone - just in the middle, you want it to stay inside the meat - and add the rest of the meat mixture. When you cut into it, there's a layer of melted cheese in the middle.
I put more black pepper, more thyme and a good dose of paprika on top of the loaf.
