Built a fire in the Smoker tonight to get it seasoned again. The applewood was producing some nice smoke and that huge smoker jumped to 225 degrees in about 20 minutes time. It saw a top-end heat of about 375 in about 45 minutes time and all the paint is still intact. We were able to hold it above 275 for over 30 minutes with four to five 2-3 inch round sticks of wood.

We have orders for 148 racks of ribs saturday so we'll be busy. I'll post some pics here saturday as the cooking progresses.

Ah yes, get the rib back and lose the headache. Sounds like a doozy of a deal.

Fund raiser. Actually, I think we are a bit cheap on price, but we the guy heading up the cooking wants to be low the first time or two to rebuild the client list. We're priced at $13 a slab, others in town are $15 - $18 a slab and the grocery store is selling 2 slab packs uncooked for $20.

You need to get your self one of these, load it up with smoking apple wood and a bit of pork fat and have a real object lesson how the Gospel and the grace of God is a sweet aroma to the sinner.

Well, we got our first hitch of the cooking endeaver. The supplier forgot to load the ribs on the truck this morning. How do you forget $1300 worth of meat? The salesman is personally driving the load out as I type. The upside is that they would have brought frozen ribs on the truck, now they are bringing fresh-packed refrigerated ribs instead of frozen.
