****Official Christmas menu thread****

What's on your Christmas menu this year?

It's just the Mrs. and I this year - no kids, closest family is 11 hours away or more, so we'll be spending the day with our friends at the local AMC. But we are cooking dinner.

I'm going non-traditional this year and doing a spin on my super secret lasagna. This year it's a fresh pasta lasagna with a homemade ragu and bechamel with Italian garlic bread. The wife is doing a vanilla bean crème brûlée for dessert.

You are wrapping the beans in bacon? I have flavored green beans in bacon, but never heard of wrapping them. That would be a hell of a lot of bacon, or not many green beans!

We stopped at a country diner just north of Kimberling City, Mo for Sunday lunch last year, and I swear the green beans had more bacon than green beans. The food was awesome though, except for the smoking area fouling the whole diner.

Biscuits with sausage gravy (Been sitting on a package of Yoder Meats breakfast sausage)

Christmas Dinner:
Pork Crown roast with glazed apples in the center
Pork sausage and pecan dressing
Garlic mashed potatoes w/ gravy
Roasted Brussels sprouts
Cranberry-Pear pie
Some other stuff the relatives will bring

The only thing my aunt ever wants to make is green bean casserole, but she makes it quickly and cheaply with canned green beans (canned soup, etc). It’s a sloppy disgusting mess.

It’s a shame because these family meals are supposed to be something to enjoy, but I’m the only one in my family who likes to cook, so it ends up being a bunch of thrown together garbage. My brother volunteered for a “veggie dish” – and is bringing a couple of steam-fresh bags. Last year our mashed potatoes were out of a country crock tub.

I’m bringing up the idea of Chinese next year – no reason for us all to suffer because no one (except me) likes to cook.

Dude. Seriously, you should just take over. Tell them to bring a bottle of wine or a veggie tray for snacks. Or if they really want to help, give them a list of ingredients and tell them to bring them to you two days ahead of time.

I'd do all the cooking if that was what it took.

My wife loves this shit. Why I'll never know. It sucks. But we'll be having it this year. It's not particularly good when it's fresh out of the oven, and downright terrible as a leftover.

I normally roast with olive oil, salt and pepper, then throw them on my cast iron grill for about a minute to char them.

I don't follow a recipe on this, because the salt content of the pancetta/bacon, and the bitterness of the sprouts, can vary so much. Here's a pretty good starter, though:

Looking at that, I'd recommend starting with less salt and adding more, to taste, and I'd recommend having more chicken broth handy, in case too much of it gets sucked up during the cooking.

Cooking sprouts this way seems to convert about 50% of the people who usually hate them, at least getting some of the others up to the all-important "That's not bad, but I wouldn't make them" status.

but I'll save that one for a non-holiday experiment. I'm already gambling on the zucchini gratin.
