I don't usually have a problem with mobile versions of websites. But yeah, sometimes they suck. Usually, there is a link on the mobile site to the full version.

I think you can go up to the address line and remove the "m." that sends you to the mobile

Some browsers in android allow you set your phone to appear as a desktop. Dolphin has a universal setting, chrome is site by site. I'm not sure about opera or firefox, but I believe they have similar features. On the iphone, I don't know what to tell ya.

With the maturity of adaptive design, you should stop seeing as many of those in the next year. www.tamu.edu is an example of the same website being reformatted to display on your mobile device, as opposed to being redirected to an m. site.

Yeah I'd dl the dolphin browser app and use that instead of your default browser. That has the setting of mobile, pc, or ipad or whatever.

Not always. I get irritated by this as well. Some sites have the "full version" at the bottom but some don't have it at all and you literally cannot see the desktop version in your phone no matter what.

As for IMDB, I love that site as a compliment when Im watching a movie at the house, which is an interesting challange for MS' smart glass to overcome, because I believe that is part of its main allure, a compliment to the media on the "Big Screen".
