I love me some biscuit n' gravy.
Being married into a hispanic family and living in SoCal, biscuits n' gravy is not a cultural norm around here so people look at me like im eating some odd, foreign food whenever i order/make it. Those people can suck it, because biscuits n' gravy is the bee's knees. With a side of grits....bacon...eggs....hashbrowns....aahhhhh yea.

2 over-easy or fried, with fresh hashbrowns from grated spuds and 2-3 slices of crispy bacon. An triangle extra triangle of toast with real butter if you're feeling peckish. Start with the eggs with Tabasco sprinkled on top. Dip the crisp bacon into the top of the yolk and give a little stir to coat. Then eat the eggs. Then roll the hashbrowns [with ketchup on top] over on top of the remaining egg bits and yolk pool to soak it all up. If you have the toast triangle, use it as a broom/mop throughout to scoop stuff into piles or soak up excess moisture.

I was with you until the ketchup.
The only sauce those hash browns need is the egg yolk. Philistine. |

It's so ubiquitous that there's a lot I'll TOLERATE with ketchup, but that's different from liking something. But hash browns with just a bit of ketchup on top is good breakfast. Just keep the ketchup away from the eggs and bacon. Aside from hashbrowns, about the only other thing I actually LIKE ketchup on is its cousin corned beef hash.

I have added a pinch of chili powder to my gravy. Don't know that it did anything of note to silence the obscene amount of black pepper I put in my mix. I like to throw an over easy egg on top of the biscuit then layer with gravy and top with scallions and lots of hot sauce.

A good friend of mine uses that, red cayenne pepper and jalapeņos. That's too much for me |

I don't think I'd ever go that route. Seems way over the top. I'd love to buy hot breakfast sausage and go that route but I have to tame everything I make anymore for the wife and the baby eats what we do. So I've had culinary castration.
