Beef Jerky: Why Is It So Expensive?
I really like beef jerky. Always have. I almost always have a bag with me, especially when I travel. My favorite brand (store-bought, anyway) is Jack Link's with KC Masterpiece. However, I never realized how fucking expensive it is until yesterday. $4.89 for 3.65 ounces? That's more expensive that tenderloin. I've never noticed before.
Why is it so expensive? I assume the processing expense? |

It's time consuming to make. There's a smokehouse right down the street from me that has the best jerky I've ever had, it's $25/lb.

i found a recipe for making jerkey out of hamburger/deerburger in an old missouri conservationist about 12 years ago. don't remember all the spices, or the oven temp, but it's pretty much just a matter of forming the burger into turd-like shapes and freezing it. then slice it as thin as you want and toss it in the oven.

I think a lot of the cost is due to the shrinkage that takes place. Probably takes five lbs. of meat to make a lb. of jerky. You're gonna pay for the whole five pounds.
