recommendations for party

OK, so the weekend of May 5, my wife and I are hosting a party for my sister-in-law's college graduation. I'm grillmaster.

Well, I'll have all day (I'm not going to grad), so I've already decided for the 15-20 people that will be at my house, I'm smoking food, not grilling burgers and brats.

What should I smoke? Keep in mind, we'll need a variety of foods, not just one meat.

You should go for a good variety.... I'd start with a chicken or two..... a good ham... and some shrimp if you can spend the $..... smoked corn on the cob is really good too....

I'd suggest a bunch of catfish, but some people might not go for that sort of thing.....

Lets see some pics of the sister-in-law, that should give us all a better idea of what type of cuts you should be smoking.

Seriously, are there any non-pork eaters among the crowd? If you don't know you might want to make sure you have beef worked into the menu.

Best bet would be to do stuff that can make sandwiches. Brisket, pulled pork, etc.

An entire pig and an ounce of pot. Seperately of course. And maybe some salmon. I love smoked salmon. But, smoke the pot first. It will make the salmon taste much better.

get a cooler and get some of the coldest beer going. Get some good beer for the college grad too because she shouldn't have to drink natty light anymore (Unless she went to northwest)

8-10# brisket

one brisket... salt and pepper.
Second...take some garlic whole cloves and with sharp knife
stuff garlic cloves throughout brisket.
Then lay your brisket on some heavy duty foil that is large enough to cover
the whole brisket. Take a bay leaf and place one on bottom and one
on top. Next take a whole can of "la costena" jalapeno's sliced long
ways...size of can depends on brisket but usually about a 12-16 oz can will do, and just pour out contents on top of brisket.
I then chop an onion in the manner of onion rings and place on top of
brisket.
Finish off by completely wrapping brisket in foil making sure that it does not
leak, this may require several wraps (don't skimp on this otherwise you will have a dry brisket).
Bake it at 250-300 for 4 hours and when you open it should just come apart.


crawfish etouffe'e

3-Large Onions, Chopped
1-Large Bellpepper, chopped fine
1/2 Cup of Rotel Tomatoes
1/2 Cup Chopped Green Onions
1/4 Cup of Minced Parlsey
1/2 Cup Oleo
1-Pound Crawfish tails W/Fat
Salt and Pepper (To taste)

Saute Onions, Bell Pepper, Rotel Tomoatoes, Green Onions and Parlsey in Oleo foro 10 minutes. Add Crawfish With fat and cover same. Gook for 20 minutes without adding any water as crawfish has enough Liquid. Season to taste ( lots of salt & Pepper). Serve over Rice..

leg of lamb

1 (4 or 5 pound) leg of lamb
2 cloves garlic
1.5 teaspoon salt
.5 tsp black pepper
.5 tsp rosemary
2 tsp redwine vinegar
1 tsp dill weed
3-4 thin slices pork salt

make 4 slits in leg of lamb with tip of sharp knife and insert garlic pieces. combine salt,pepper, rosemary and crushed dill weed and rub in well.
place fat side up into shallow roasting pan.
DO NOT COvER AND DO NOT ADD WATER.
Insert meat therm. and put in preheated 325 degree oven and roast until therm. registers between 175 - 180 degrees or around 25-30 mins a pound.
use pan dripping for gravy.
serves 8 and alittle hot pepper jelly is good on the side.

I was thinking a brisket, a small pork butt and maybe a chicken or two. I'm too cheap to buy the seafood (besides, the grad herself doesn't like fish or shellfish).

Yeah. Skip grilling/ smoking fish,
with the other real meat choices

plus the different sides for fish. rice etc.....

good plan.

Maybe some wine or Margs for the ladies.

Good beer, Ale, Lager variety and good light beer.
