I used to grill Persian Kabobs once every year in the middle of February. Right in the middle of the snow. It was my personal tradition and my way to show the finger to Mama Nature. This year though we've had mostly a Spring-like February which took my incentive away.

Get that crap out of here, Frankie. How could you be any more unAmerican than posting some other crappy goat meat on a cheeseburger thread?

You sir shall never experience the magnificence of "The Food of Kings." It's a fate only surpassed by getting gang-raped by 3 camels.

little sisters, oldmans recipe.
Stuffed Farmhouse Burgers

by jcharlson on August 20, 2010
in Food & Nutrition,Recipes,Sandwiches and Burgers

Keith has been experimenting with recipes in the kitchen again, coming up with some new things for our members to sample, and I believe we have a winner, Stuffed Farmhouse Burgers. These can be made with either beef or pork but today he built two pork versions using pizza cheese curds in one and garlic cheese curds in another.

To start, weigh the ground beef or pork (sausage is even good) into 3 oz portions and form into patties. Make sure the patties are the same thickness all the way across. Top each patty with 1 oz of cheese curds (or any cheese that you like).

Add a second patty onto the first and seal the two together all the way around.

Season the patties with salt, pepper, and garlic, or whatever seasoning you prefer. These can be cooked on an outside grill or on a flat top inside.

Keith cooked ours inside and I was being very impatient waiting for the food to hit the table. He does recommend cooking them slowly so the center can get done to your liking. Once these guys hit the table the troops come running.

It's a fast food hamburger. If you end up thinking it's something special, you've been marked.

A trick for people that don't like Mayo: Cream cheese.

The problem with a good burger is that your first bite is going unleash juices and stuff that go right into the bun and turn it into a sloppy mess of a burger. I refuse to put lettuce underneath the burger. Mayo will do a good job of acting as a barrier to it, but mayo kinda sucks.

So the answer - a think layer of cream cheese on your bottom bun. The juice doesn't really seep through it and your perfectly toasted bun remains perfectly toasted.

I realize it's fast food, but from all the junk these people from California talk it better be above average.
