I actually consider the Council of Nicaea as the establishment of the Roman Catholic Church. So anything before 325 AD would just be "the early church." After Nicaea the RCC pretty much set the rules. Of course there is plenty of room for debate on that. Nothing is cut and and dried in this regard.

A LOT can change in 250 years, think back to something that happened say in high school and by the end of that day how different the story was from what actually happened.
