Robots win the minimum wage debate...

The Robots Have Won: Panera Replaces Cashiers with Kiosks

This isn’t the first time kiosks were used in place of real people. Airlines have been doing it for years, and now Panera has joined the club!

The soup and sandwich giant will be cutting down the number of cashiers in its new store design in attempt to fix its speed problems. The chain has faced criticism in the past over its slightly slower service in comparison to other fast food companies, so it was proposed to put the power of the order in the customer’s hands. Panera Chief Executive Ron Shaich said in an interview:
“The dirty little secret in the food industry is one in seven orders is wrong. We’re one in ten, a little better than average. Half of those inaccuracies happen during order input.”
So if you’re dining in at Panera, here’s how it’s going to break down. You’ll order your food exactly how you’d like it at a kiosk, then grab a store pager connected to your request. When the food’s ready, an employee will bring it to you after you flag them down when your pager goes off. You’ll also be able to order using your phone from where you’re sitting in the restaurant and skip the kiosk altogether. Online orders for pick up will be accepted as well.

For those worried about robots stealing their jobs, Shaich insists that there will only be one or two fewer registers even though the average restaurant will have 8 kiosks.

I'd love to see robots eventually preparing the food too. No metal machine is going to pick his nose and wipe boogers into your sandwich or forget to wash his hands after he takes a shit and returns to handle the lettuce for your Turkey Bravo. Most food sickness comes from unwashed employee hands

Yeah I don't consider Panera fast food. I wouldn't want to wait 15 minutes for it or anything, but I don't think I ever have.

My wife had to go to a Chilis or Applebees recently and she said there was some kind of electronic ordering system on their table there. You could order your food and drinks on it and add a dollar or two to your tab if you wanted to play some kind of game on it.

OK, so 1 in 7 is wrong, but only half of those are because of order input? They really think its going to be more cost efficient by installing and maintaining Kiosks? To each his own I guess, but I think kiosks would slow the process way down. If you assume a certain percentage of customers are indecisive about what they are going to eat and a certain percentage of customers are not very tech savvy. There's going to be an overlap between those two groups and a busy food service becomes bogged down real quick with people standing in line and leaving out of frustration, or not being able to work the machine and leaving out of frustration.

Plus, if you can order by your phone, you have the propensity to overload the food service area and you're waiting longer for your food even though you ordered ahead of time. This leads to rushed and sloppier food prep and you might lose the "wrong input" ratio in an attempt for the kitchen to keep up.

It might work for some restaurants, but I think there are hidden drawbacks here beyond the obvious need for humans to interact with other humans during collective activities. There may be frustrations with it, but most people are a bit reassured by personal interaction than put off by it. There's a responsibility factor in social interactions that one can lose with one way interface.
