Since my parents have had a hard year, my Mom and Dad didn't want to do the annual Prime Rib dinner, so Hoover (The Good Son) is in charge of Christmas Dinner.

The Menu (Christmas Eve Dinner)

For starters
Waldorf Salad
Hoover's Stuffed Mushrooms
Bruchetta (sp?) with a Shrimp/Spinach/Artichoke topping

Main Dishes

Smoked Pork Loin
Turkey Breast

Baby Potatoes (Red and White ones)
Asparagus
Green Bean Casserole
Stuffing

I still need to find a good bread to serve.....

Christmas Night Menu

Hoover's Baby Back Ribs (Two Racks)
Left over turkey and Pork Loin

Hoover's Cheesy Potato and Ham Soup
Hoover's Chili (My specialty)

Are you cooking this year? If so what on your menu?

Its going well.

I'm down 50lbs and have held it there since October. After ther Holidays I'm going back on it in hopes of losing 25 more lbs. I still watch my carbs, but not like I do when I'm trying to lose weight. So currently I'll eat whole wheat breads but still saty away from lots of Sugar crap foods.

I get my pork from a friend who has a big BBQ company. They do the food for most of my large fundraising events so I get a very good deal.

Its going well.

Eat, Drink, and be merry.

Everything sounds damn good. Consider this if you have enough stove top and someone willing to play sous chef: Drop the bruchetta and steam the artichokes whole --instead make hollandaise (a classic treatment and definately fits nicely with the Waldorf and mushrooms). Nothing like butter and eggs...:thumb:

How do you make your stuffed mushrooms? My wife is looking for a decent recipe to use up some really nice mushrooms that we got from Costco.

I take portabella caps

Chop up the stems
Chop up a pound bacon
take a package of cream chese ad the bacon, and mushrtoom stems. As minced onion, basil, galric powder, mix up and stuff the caps.

I thm lightly brush the caps with olive oil.

:thumb: Thanks, I figured your recipe would be low carb.

We make a dip/spread by taking peppers, onion, zucchini, and garlic, cutting them up into large chunks and then roasting them in the oven 'til the edges are starting to blacken. Dump the pieces into a food processor and mix it up with cream cheese.

Thought that might be good as a "mushroom stuffer" but wanted to check out some other recipes, too.

Tonight we're going to make Sugar Toast and Chocolate Milk........First, I put 2 slices of Whole Wheat bread in the toaster, set on 4 and push the lever down.......Naow, While dats cookin, I pour an unmeasured (cool pouring from Jug Pose) 2 pints of 1%Bovine Milk into the Glass.........now, I take this Spoon and add 2 Heaping piles of Rich, Chocolate Ovaltine BAM! BAM!.............
