Salmon, main course.
3 Tbls. honey
3 Tbls. soy sauce
4 Tbls. mirin (sweet Japanese rice wine), I used Sake
1 tsp. wasabi powder
1 Tbls. fresh lime juice
2 tsp. veg. oil
salmon fillets
In a small bowl, whisk together honey and lime juice. In a non stick skillet, heat oil over med. high heat and cook salmon 3-5 minutes on each side or until cooked through.
And for a side dish, spinach.
2 tablespoons extra virgin olive oil
2 medium tomatoes, peeled and cut into thin wedges
2 cloves garlic, crushed and finely minced
1 pound fresh spinach, washed, drained, and torn
fresh ground pepper and sea salt
In a large skillet over low heat in vegetable oil, sauté tomato wedges and garlic. Add spinach; cover and cook over low heat for 15 minutes, stirring 2 or 3 times.
Add salt and pepper to taste; cook 5 minutes
So good right now.
