It's too fragile to use hickory or mesquite. I'd suggest apple. No higher than 250-degrees... should take probable 8-10 hours. A nice rub is all you need, maybe baste with a little hard cider or apple juice.

Long pig needs citrus, maybe even going with a Jamaican jerk rub. Smoke with apple or cherry wood.

I think I know the right way to cook it, but I don't want to say. If I'm wrong I'd just be putting my foot in my mouth.
