So what do you do with all that leftover turkey?

I'm heading to the grocery store to pick up the fixin's for a bitchin' pot pie.

I'm usually a turkey soup go but I must that a pot pie does sound appealing. If I didn't have to work today I'd probably get ambitious and try it.

FMB, you gonna buy a frozen pie crust? Seems like that would be a big time saver.

Yup, frozen crust for the bottom, puff pastry for the top.

we had a bunch of brown turkey we threw out, we only like the white portion. The other shit mashed potato's and stuff we threw in the grass

We'll eat off the left over mashed potatoes, gravy, stuffing, sweet potatoes and green beens over the next couple of days. I held out enough turkey to go with that and threw the rest in the freezer (4 quart bags). We'll eat most of it in turkey sandwiches. Some will get tossed due to freezer burn.

Caracass will make turkey stock. Might make Turkey Velvet Soup out of at least some of the stock and left over turkey.

I'll put the carcass in a stock pot tonight and cook it down. I shudder to think how many turkey carcasses are thoughtlessly thrown in the garbage, never to achieve their full potential as turkey stock.
