No, I'm not smoking it. I'm using my crock pot. Bought a 3.5 lb boneless pork butt. Yes, I know it's better to cook it with the bone. It's my first try, so I didn't get fancy. Put in a bottle of stout beer and some cajun marinade. I figure I'll put it on keep warm overnight, and then turn it up to low before I go to work tomorrow? Does that sound good for getting it done?

I've actually tried this in the crock pot too. This was like 6 yrs ago. Can't remember what I added exactly, but it didnt come out well. I mean, it was tender, but it didnt taste very good.

My dad makes his in a crock pot, and it's awesome. Not as awesome as Phil's, but I like it.

No, that was a typo.

I had to pay extra and buy a mixed 6 pack, since I don't drink stouts. I got a Harp's, a Newcastle, a Mike's Hard Lemonade,a Mike's Hard Mango, and a Dos Equis Lager, too. Yeah, there wasn't much of a selection on the singles.

If "warm" ends up partially cooking it, I'm thinking it will be overcooked. If it doesn't contribute to the cooking, I'm thinking it will be teaming with bacteria by morning. YMMV.

Yeah, the bacteria part was the first thing that crossed my mind as well, but I thought maybe she just was confused in her terminology. There really isn't much sense in putting raw meat on warm.

No, I'm a moron...lol.

I've got it on low now. I will put in on keep warm in the morning. That's 12 hours of cook time though. Maybe that extra beer will come in handy? Or should I cook it on low until I go to bed (usually midnight, and I put it on at about 7:00), and them put it on warm. That would be five hours of cook time.

Here is how I do it. Take a butt about that size, but I do usually do it with the bone. By the time you are done, you can just pull the bone out easily, and it does give extra flavor. Take a large onion and slice into about half inch slices. Leave packed and cover the bottom of the crock pot with the onions. I usually throw in 2-3 smoked ham hocks, since I am doing it in a crock pot, and they are cheap enough. Throw in about 7-10 whole cloves. Maybe a shot of water tops. Close the lid and cook on low for about 8 hours. When you come home, everything will be falling apart.

Pull the butt out as much as you can, and also pull out the ham hocks. You can either throw them away, save them for later, or now I often pick the meat out of the ham hocks (a bit of work though) and throw the ham hock chunks in with he pork butt. No need to keep the cloves or onions, that was just to flavor it. Use the fork to string up the pork and throw the pork and cleaned ham hock meat bits back into the crock pot. Now, use your favorite bbq sauce or carolina sauce or homemade sauce, and cook for another couple hours on low to really let the flavors mix.

Serve on a bun with cole slaw and hot sauce. Delicious.

EDIT: I never use beer for something like this, since the meat is pretty tender by the time you are done. If you are workig with a dry tougher meat, beer is a good tenderizer.

whenever you cook a big piece of meat in the crock pot, you shouldn't need very much liquid at all. If you're throwing veggies in with it, like potatoes or something then you can add a little more. But the slow cooking in a container with a lid doesn't let any steam out, and the meat will produce a lot of juice itself.

In that case, just let it go until maybe 30 minutes before bed. At that point, remove the pork and let it cool, then wrap it in foil and put it in the refrigerator. There are several different steps you can take tomorrow to finish things off.

I made chicken, smoked sausage & shrimp jumbolia in the crock pot last night. Yummy! Just the right amount of spice w/o being hot.

While a crock pot can't match a smoker or BBQ it can still put out some good pulled pork. Good stuff. Just watch out if Hog Farmer comes over and throws on some Barry White while holding a sandwich baggie.

Crock pots are meant for poor quality cuts that need a long time to cook... roasts and pork shoulder (butt) included.

When I do pork butt in the crock I start with the butt, salt, and pepper. No liquids - there's too much fat in the butt. I let it cook on low for about 5 hours and then remove fat with a turkey baster and then season with BBQ flavors. Let it go another 3-4 hours and it's perfect.
