I am aspiring to become an 19th out of 19th ranked Chili cook-off winner... and want to try some other types of chili...

I use some rotel diced tomatoes... Some tomato sauce... some mexican beans and red beans combo...

some McCormicks Chili mix... allegedly all natural ingredients...

some big chucks of BBQ grilled chicken...

some pepper, some Chipolte Tabasco...

and that's about it.

What's your secret to 19th ranked chili?

INGREDIENTS (Nutrition)

* 2 green bell peppers, seeded and chopped
* 1 red bell peppers, seeded and chopped
* 10 ajies dulces peppers, tops removed
* 3 medium tomatoes, chopped
* 4 onions, cut into large chunks
* 3 medium heads garlic, peeled
* 25 cilantro leaves with stems
* 25 leaves recao, or culantro
* 1 tablespoon salt
* 1 tablespoon black pepper

DIRECTIONS

In a food processor or blender, combine green peppers, red peppers ajies dulces, tomatoes, onions, and garlic. Add cilantro, recao, salt, and pepper. Process to the consistency of semi-chunky salsa (not watery). Place in a ziplock freezer bag, and use as needed, or freeze in portions.

If I was planning on making some 19th out of 19 ranked chili, I think that you've locked down the secret. I certainly couldn't improve on that in order to get to 19 of 19.

Rotel...McCormicks seasoning...Tabasco...BBQ Grilled Chicken?!

Fuck Ari. You'd be better off going and buying a can of Hormel.

I like to make a Cajun White Chili using andouille sausage and alligator, with fresh tomatillos, great northern beans and heavily flavored with thyme, cilantro, garlic, sweet onions and such.

My "red" chili always uses lamb as one of the meats as I like the contrast in taste and texture to the pork and beef. I've used both ground lamb and cubed up lamb, and I prefer the immediacy of the cubed lamb on the pallet.

Color it has to be a dark red the only constant for me and works when I have to fix others poor attempts at chili . I never make the same way twice. Good advice has been given so far. A crockpot helps... PM me with questions if want for other info.

Campbells tomato sauce and refried beans-I hate tomatos and the refried beans add texture. Otherwise, spice and dice with a medley of peppers, onions and spices. Don't forget the cumin.

Peanut butter [natural is best] for consistency and brown sugar so you can pack more heat in without people freaking out [the slow burn].

Usually set the base heat with fine ground cayenne, and fine tune with McElhenney's Tobasco.

Also like to mix in some finely sliced skirt [i'm talking Deli thin, Steak'Umms work in a pinch] to brown along with the ground beef for texture.

To me I only use allspice when cooking something sweet like cookies or cake , I don't have a sweet tooth any more. I cook with a bite to it.

Allspice, ground mustard, cumin, grape jelly and beer goes in my 'award winning' chili... also use tortilla chips as a thickening agent.


BTW, do you like BBQ?

Sweet is not a binary condition, a little sweetness in chili masks it's spiciness and enhances the savory flavors. Besides, allspice and cinnamon aren't even sweeteners, they are bridges to the sweet and the savory. Allspice is a key component of jerk flavor.

Jerk flavor is not something I aim for in chili, bbq sometimes.

kidney beans, tomato sauce, tomatoes, all natural beef, chilli powder, water, salt and pepper, paparika, onion salt, onions, and garlic. its all really good together. just rinse the beef after you cook it, it helps with the saturated fat. its not good if you keep all of the saturated fat in the beef. good luck:) hope i helped :)

Haha... nah, it's actually really good. In fact, got tons of compliments on it... but... I don't know man... 19th ranked chili is pretty tough to do.

I think I may add some andouille to it... that should increase odds

If you are doing this, you might as well just add some prepared mole rather than the straight chocolate and sesame oil.

What kind of Chili cook off allows beans?

But one ingredient I use that some have found strange (it's already been mentioned on here though) is chocolate. Another is mustard powder.

Freshly ground chili powder with Ancho chilis, new mexico chilis, and california chilis. Makes all the difference in the world. Also vinegar.

CASI judges apparently don't like unique flavor in their chili. They prefer just red beef that tastes like chili powder, with the consistency of sloppy joes.

Use steak cut into cubes or Stew meat. Then when you are going to put in the beans, throw them in the trash and add more meat.
