I tried a search and didn't find a thread specifically about this.

So lets hear em.

Mine is Sriracha. I've only had the Huy Fong Foods version, not sure if there are any others out there, but if there are I'd like to try them.

Different hot sauce for different foods. I always have tabasco, tapatio, and sriracha on hand, and usually a couple others.

Love Tapatio with breakfast on eggs/omelets/scrambles. For hot wings I am a big fan of Wing Time sauce out of Boulder I think. The best really hot sauce I have had has to be Dave's Ultimate Insanity hot sauce.

This.

Tabasco is probably the best all-purpose sauce. Sriracha or garlic chili paste are great for cooking. Franks makes a good base for a wing sauce. And Ortega Hot Taco Sauce (mixed in with some shredded chicken) makes some killer taco meat. Those are my staples.

P.S. if you like Ketchup.

3 tbsp of ketchup to 1 tbsp of Tapatio is loin-meltingly delicious.

Also You can use Tabasco to do the same, still good, but not as great.

Give Valentina's a try. The taste is somewhat similar and it's substantially cheaper than Tabasco. I get it for about a a buck per 24 oz bottle.

Also, some of the best hot sauces come from the local taco shops. They all taste different but for the most part are great.

I usually just go with Louisiana or Franks for your basic American fare.

Yeah, we're kind of wimps when it comes to spicy food... "American hot" is mild-medium in other places.

I have Sriracha, but I need to look for one of their other products, the Chili Garlic...

That stuff isnt really spicy but its good.

I never thought of using it as a marinade.

Lets say I want to marinade some chicken filets.

I could use this and what else in the marinade?

This thread comes up once every other month or so; your ability to search = fail.

However, Frank's Red Hot is far and away the best hot sauce. The six varieties of Tabasco are quite good as well.

In my fridge right now:

Tapatio, Tabasco original, Tabasco chipotle, Sriracha, Huy Fong chili garlic.

I use Tapatio probably more than anything else, with the chipotle tabasco running a close second.

Edit: Oh yeah, I also have la-yu chili oil in my pantry.

I like this one real well. It's got a nice kick but a deeper, earthier flavor than the habanero sauces. Some of the habanero sauces are just hot for the sake of hot.

I think I've liked almost every Uncle Dougie's product I've tried. Their mustard habanero is excellent, as is this one - chipotle habanero.

Agree with others that say different sauces for different foods. The ones I have in my fridge at all times are Frank's, Tabasco, and Sriracha.

I usually keep a bottle of Dave's Insanity too. It's hot enough that a small amount can heat recipes up without altering the taste much (unlike a vinegary tabasco for example).

I usually have a few "non-brand name" bottles laying around too, but so many of those are about heat rather than flavor so they are too much of a novelty to be considered favorites.

I started the earlier (better!) thread. At the time, I was shocked that I was missing out on so much by just going straight for the Tabasco. Now in my fridge:

Tabasco
Tabasco Chipotle
Frank's
Sriracha
Maggi Sweet Chili Sauce (Thai)

These are all distinct and have their role to play. I've tried a few other sauces at various burrito joints. The world of hot sauces is much like the beer world. It is fun to sample the variety, but if pushed, you can consolidate your list to a few go-to bottles.

I like Frank's the best. Tabasco is pretty good. I don't like Tapatio as much as those two, but I like hot sauce so much that I'll use Tapatio if it's all that's around.
In my first year of college, after eating a big dining hall meal of spaghetti and Italian bread, the conversation at our table turned to food challenges, such as eating a slice of white bread in less than 60 seconds with no drinks and so on. Anyway, long story short, I won $28 on a challenge that involved me drinking the remaining contents (about 8 oz.) of a big bottle of Tabasco in less than 20 seconds and not having anything to eat or drink for 30 minutes. I used a fork to pry to top stopper off and then took two gulps to down all the sauce in less than 10 seconds.
Anyway, I was amazed to learn about 20 years later that the supposed world record for Tabasco consumption in less than 30 seconds is about half of what I drank, which I didn't even imagine was all that remarkable. I would have thought that the world record was at least double what I drank. Anyway, to the credit of the supposed record holder, he did drink the sauce by having it drip through the stopper. Still, I bet that there are gobs of folks who could easily shatter the supposed "world record". Here's the video of the guy credited with having the world record.

Little surprised with the love Frank's is getting. It is easily my least favorite of the common varieties because it mostly tastes like slightly spiced vinegar to me.

You are probably just not looking hard enough or your local grocery stores may just not carry anything that isn't very common.

Around here at least, Dave's Insanity is very easy to find at Target or Wal-Mart with grocery sections or just grocery stores.

Tabasco vomit out your nose is a special feeling... and I won't even start on what the toilet looked like the next day.

A buddy of mine has it on video, but I've never gotten a copy of it.

Wow, I can imagine that the Tabasco would definitely sting the nasal cavities! That's a cool story. I don't think I would have been bold enough to make a bet for the money. In my case, if I hadn't been successful, I wouldn't have been out any money. I think the upperclassmen were just willing to put up money for the spectacle, even if they ended up losing some of it if I were successful. I think you'd have to get in the sort of territory you were in , a whole pint or so, before one would have much problems. The so-called world record probably get surpassed at least a couple times of week in America's college towns.

Years ago, me and a few buddies were sitting in a bar drinking pitchers of beer and eating pizza. There was a jar of crushed red pizza peppers on the table and one of my buddies points to it and says, "hey R, betcha the next pitcher of beer I can eat more of those peppers than you". So I tell him yeah, you're on, go ahead. He grabs the jar and pours out a big handful and shoves them in his mouth and starts chewing. Within a few seconds he starts turning red and his eyes are watering and he's starting to cough but he keeps at it and in a minute or so he swallows, then opens his mouth so I can see that he did, indeed, eat the peppers. I just looked at him and said, "fuck it, you win, I'll buy the pitcher".

He seemed a little disappointed.

I love Frank's for wing sauce. For most other uses I find it too vinegary.

It's a essentially spicy vinegar. the ingrediants are literally like: Peppers, Vinegar.

You are talking to a true chili head here. I follow the scovie awards and try many sauces every year. I also like many different hot sauces for different applications. If I could only have one though I would take this one.

Extra hot. Great flavor and irregarless of how it is advertised it is not that hot. My kid eats it. It's great on everything from eggs to chicken and fish to your bloody mary. I go through 1 bottle about every 10 days.

This. I put it in chili. I put it in all my asian food. Wings, bbq, you name it. I buy the huge container at the chinese market down in the river market and go through a few a year. Yum.

Mixing it with the lethal is the bomb. I just got my most recent order. Two friends and I all ordered a gallon of regular and lethal. Best wings ever. I use it on all kinds of stuff but have really been using that hotlime a lot now. Gotta get that in bigger quantities. $10 a month habit right now.

Here's one I picked up at this year's Fiery Foods Show. It's a hot sauce made to go in beverages. I tried it in a margarita, gave it a nice kick. Basically, it doesn't have any flavor of it's own. It just dissolves in the drink and adds a little zing. Not something I'd use every day but a nice occasional novelty sauce.

I used to be all about the HOT. Now I want complex flavors more than heat. I love Pickapeppa sauce. I still use Frank's and Tabasco and homegrown pepper sauce from my buddy's garden.

I would say that sounds more like Tabasco to me. It's a essentially spicy vinegar. the ingrediants are literally like: Peppers, Vinegar.

Tobasco at least has a little spice but I don't like it for the same reason of too much vinegar. I don''t think there is a hot sauce more mild that Frank's. A salad pepper might be hotter.

Every grocery store around me carries the red and green but I can't seem to find the habanero version. If you can point me to a store that carries it I would appreciate it.

Here's one I picked up at this year's Fiery Foods Show. It's a hot sauce made to go in beverages. I tried it in a margarita, gave it a nice kick. Basically, it doesn't have any flavor of it's own. It just dissolves in the drink and adds a little zing. Not something I'd use every day but a nice occasional novelty sauce.

Anything you want to spice up without getting a vinegar/pepper flavor, I suppose. I'd use it in adult beverages more if I was drinking more.....I haven't had much alcohol since the 90 day sobriety thread started. Now that I think about it, I bet it would be interesting in a beer. I'll report back.

Try the King Soopers on Colfax and Speer. That's probably the easiest for you to find. Otherwise, 26th Federal (Safeway), 38th Sheridan (King Soopers). Probably Alameda and Bannock (Albertson's) but I haven't been there for over a year. Both the Safeway and King Soopers in Englewood near Broadway and Hampden always had it also.

p.s. The red and green are habanero, too. This "kutbil-ik" is a special recipe - smokey like chipotles.

Yeah, I think that they must smoke dry the habaneros like you do jalapenos to get chipotles. It's a really unique and delicious flavor, but it will light you up. I also love the coloration and texture. It just has an unusual, evil look to it.

Franks, I agree, is a good all around hot sauce. Tabasco, if you're looking for more heat and less chili flavor. I didn't see anyone mention LaVictoria Salsa Brava. If you like Cholula and/or Frank's, I recommend that you try it. Has the same chili flavor, but it's thicker... almost ketchup-like consistency. Works great on burritos to spice 'em up.

Here's one I found in Coldwater, Michigan at a bar called The Willows. They used it on their extreme hot wings (which were excellent). If you like an extreme amount of heat, without sacraficing good pepper flavor, this is a good choice.

I like this one real well. It's got a nice kick but a deeper, earthier flavor than the habanero sauces. Some of the habanero sauces are just hot for the sake of hot.

I hesitate to mention this one, because one typically can't pick it up at the local grocery store. But, Tabasco has a Sweet and Spicy sauce that is simply delicious. It's hot, but it has a wonderful sweet flavor that is perfect for rice bowls etc.

Whenever I grill chicken, I end up grabbing a large mixing bowl and throwing a bunch of stuff in with the chicken... Sriracha, Chili Garlic (post #29), BWW Wild and Blazzin, Grinders Near Death Sauce (which helps turn the chicken blood red... nice effect), Gates Extra Hot (you know, to tone it down a bit)... good stuff.

I now make my own hot sauce. Chinese red pepper, garlic, onion, curry, and a few other seasonings all boil together. Put in the refrig. Serve with olive oil.

A hot sauce called Dave's Gourmet Insanity Hot Sauce, no doubt. I put one drop in a bowl of chili and it is more than spicy enough to get your nose running. I found it regular grocery stores.

Yeah Daves insanity would work for that.

You could also go with a dry spice. I usually use ground cayenne pepper when I want to add heat without changing the flavor.

Just add cayenne pepper.

Whenever I'm looking to add straight heat, I just dust cayenne. If you wanted to make a sauce, just mix it with a little vegetable oil and brush it on.

It's simple and largely brainless.

Thanks to this thread, I've tried Sriracha (like it) Cholula (love it) Tapatico (OK) Frank's (very good) but Tabasco is still my favorite. It's just what I grew up on, and it's the most versatile. I really like Cholula on eggs, because it's thicker than Tabasco and stays put.

Son of a bitch. My connection dropped out while I was posting my response and it got wiped out. The original version was much more elegant, but I'm not inclined to rewrite.

New version: Not about rules, about not adversely affecting the dish. I haven't tried it, which is why I said "generally." Rethinking, it would probably work for certain things (thick chili), would likely not work for other things (water-based soup, where a liquid hot sauce would incorporate better).

I'll give it a shot, though.

Not a huge fan of Franks, but do appreciate it in certain recipes. Though, not a a big fan of 'buffalo' type sauces. Not saying Franks is this, but a lot of wings recipes use it as an ingredient and it's hit or miss for me

I have bought this in stores across the country, not always easy to find. they have a few other varieties like chipoltle, classic, and so on, but the jalapeno is the bomb. Most So-cal stores carry it in the mexican food section so I would assume the same anywhere else. Please feel free to report where you can find it back east.

I think different sauces work better with different foods. Sriracha on quiche, Franks is best on chicken, I like Tabasco in chili and on fried eggs, but prefer cholula or tapatio on scrambled eggs.

They all have distinct flavors. I always have Franks, tabasco, and Sriracha on hand. Occasionally buy other sauces for specific meals.

Lol! The first time I tried it was a couple of drops in a gumbo. So freaking hot I dished the bowl instantly!! When I got used to it, I would spread a thin layer of it on an iHop omelet! Now they have Ghost and Scorpion flavors that I would not even dare try! Probably instant nose bleed and seizure!!
