View Full Version : Food and Drink Brining a Cured Ham...?

I'm smoking a ham for my family this weekend and was curious: Since a cured Ham is technically cooked could and would it be advisable to brine it in order to ensure tenderness and to get the ham to absorb some additional flavor?

Would love to hear from some of the CP BBQ gurus on here. Thanks in advance.

I'd think brining would destroy it. Hams are already pretty heavily salted... if you cook it right, it should be fine. Get a probe thermometer and cook to about 155, then let it rest.

we just smoked what I thought was a cured ham at work. It came in a burlap type bag. It was covered in a salt mixture. We had to scrub it clean and then smoked it. It was quite salty tasting after cooking.

Thanks guys I hadn't even thought about the salt content. I'll forget about it then and just maybe consider injecting some flavor in instead.

I will put a spiral cut ham on my smoker and use the heat to warm it up just like you would in a oven. I baste it with the glaze throughout the process about every 20 minutes that comes with the ham. Also while making the glaze I add a couple of tablespoons of Dr. Pepper to the mix, sounds weird but comes out great. The glaze keeps the ham moist and mixes with the smoke to create a great bark. Now I am getting hungry for one just thinking about it.
