He's not on the Vikings' injury list as of today:

Shiancoe seeks rebound: Minnesota TE Visanthe Shiancoe took a step backward in Week 3 after registering just one catch in an overtime loss to Detroit last Sunday. Shiancoe was coming off his best showing of the season in Week 2 against Tampa Bay (three receptions for 28 yards), but could not duplicate the outing versus the Lions. Shiancoe earns an opportunity to rebound in Week 4 against Kansas City
