I know they don't have anything equivalent to a draft over there, and I know they sell the rights of their players to other teams, but do they ever have any kind of free agency or are they the "property" of their clubs forever, until another team buys their rights?

Players can start sign contract with clubs when there are 18 years old. There are then property of the club for as long as the contract run. Normally most players don't see out there contract. There are either sold to another team or sign an extension with one or two years left.
