So, what is everyone having on their menu for today's festivities? We are having deep pit, chicken strips for the kids, 3 racks of BBQ ribs and a shit load of finger foods such as homemade jalapeño chips and dip etc etc.

Was originally going to grill some burgers and brats, but it's too fucking hot out so we're doing pulled pork in the crock pot. I know...tsk tsk...but it's going to be miserable enough just going out to light off fireworks.

As far as food goes, I was going to do ribs.....until I found out our small gathering jumped up to 20+ people.

So, went the cheap route. Hot dogs, brats, chips, dips, sides, beans, etc.

Wanted to do ribs but im too lazy for that now. Grilled Bacon (Fresh, Thick cut Bacon from the deli) Cheeseburger route, Bacon wrapped Hot dogs, macaroni, potato salad...you know, the normal stuff.

Did some cheeseburgers on the grill for lunch. The lady who lives next door had a knee replaced on Friday, and she's home bound for awhile. I slow smoked a boneless pork loin and a turkey breast today, took a plate over for her for dinner. Had hickory smoked beans, macaroni salad, fresh strawberries and watermelon. Brownies for desert. Great meal. Very tasty stuff. Love my new smoker.

Just kicked back in the AC watching the Royals tonight. Wifey went to Starlight to take tickets and watch fireworks. I'm going to the Royals game on July 13th, I'll see fireworks then. Too damn hot to go out tonight. Also don't want the little neighborhood gomers to set my house on fire with a stray bottle rocket, so thought it would be good to stay home tonight.

I'm making my son grill kielbasa in the back yard that we'll be putting on buns with lots of condiments, making my daughter mix up some French onion dip for potato chips. About to go grab some Corona, and we'll light off the Chinese fireworks in a few hours.

got called out around 1pm. 3 hour round trip to fix it. picked up smoked ribs @ a vendors booth on the way home. sucking down some of the best ribs i've ever sucked down.

I made potato salad with boiled eggs, mustard, mayo, English mustard powder (rather blasphemous on this day, right?), sea salt, coarse black pepper, and some parsley flakes. Then I grilled chicken served with my homemade barbecue sauce, had sliced strawberries, and will have some watermelon before the fireworks displays start.

Whipped up some bitchin cucumber mojitos, damn these are tastey!

Best part is going to be watchin fireworks with the grandson for the first time =)

If they completely ban fireworks, it does indeed seem like slamming car doors would be a good substitute.

My wife and I had a great 4th of July dinner. We had a grilled beef tenderloin with homemade potato salad, homemade watermelon salad, biscuits, and lemonade. Great stuff.

Regular Fourth of July stuff mostly but I also did a grilled ratotouille. Grilled eggplant, peppers, onions, mushrooms and zucchini and then chopped it all up and tossed it in a skillet with sauteed garlic. Cooked for about 10 minutes and finished it off with grated parmesan and basil. I was pleased with the results, as was my family.

How do you make a cucumber mojito?

Here ya go =) , most of the time i sub Sprite or 7up for the club soda, but only because that's what i usually have around. I think it comes out better with the soda.

Cucumber Mojito
YIELD: Makes 1 drink
INGREDIENTS:
½ lime, juiced
½ lime, cut into wedges
3-4 sprigs fresh mint leaves
1 tablespoon white sugar
1/2 a cucumber, peeled and pureed
Ice
2 ounces white rum
4 ounces club soda

DIRECTIONS:
Puree cucumber in a food processor with the fresh lime juice. Pour into a glass filled with ice.

Gently muddle lime wedges, mint, and sugar in the muddler.

Add the muddled ingredients to the glass with rum and club soda.

just had black angus burgers - I also had beans, jalepeno chips, salad w/ arugula and rasberries. Um, hot dogs, cupcakes, nothing special this year. But i had a Tahitian Treat soda and it was pretty good for a change. It reminded me of ol' school KC's 'The Pop Shop.'

It's fine, there's better. But it's pretty solid, for what they are and RL's affordability.

If you're ever in a city that has these (http://www.mccormickandschmicks.com/) - i'd recommend you give it a whirl.

I finished off a pizza from Papa Johns from 3 days ago and some pasta from 2 days ago. I drank water and gatorade today. I do holidays up.

Smoked pork butt and barbecue chicken breast. It was really good. My dad is pretty great with a smoker and a grill. It's a shame he doesn't cook out more often. I've been trying to get him to smoke a turkey for years now. About 15 years ago he used to smoke turkey and it was sooo juicy and flavorful.

I've been trying to get him to smoke a turkey for years now. About 15 years ago he used to smoke turkey and it was sooo juicy and flavorful.

only about 2.5 hours and didn't get to see any big fireworks but at least the extra pay helps. Next year I am taking the entire week of this holiday off though.

Had the family over. No grilling due to the heat. Celebrated ‘Merka with Mexican food!
Moms made her famous taco casserole. Layer after layer of tortillas, meat and cheese in a casserole dish. Hoo RAA!

Went to a big cook out last night. They smoked a whole pig and we also grilled up dogs, brats and Italian sausage. Not to mention all the fixin's.
