I'm a big fan of sriracha, so this would make me sad...

In Irwindale, California, nose-y neighbors, sick of the supposedly strong chili smell emanating from the factory where Sriracha hot sauce is made, want the Huy Fong Foods factory shut down unless the odor can be abated. The city has filed a public nuisance lawsuit, says the Associated Press, “seeking temporary closure of the factory until Huy Fong submits a plan to minimize the smell.” CBS:

“The odors are so strong and offensive as to have caused residents to move outdoor activities indoors and even to vacate their residences temporarily to seek relief from the odors,” according to the suit.

Living next to a food processing plant is always a scented existence, and Huy Fong Foods has denied there’s a problem. But if the injunction goes through, it could spell bad news for hot sauce lovers everywhere.

The factory in Irwindale where Sriracha is now made opened just last year. At 650,000 square feet, says Quartz, the company can pump out up to 7,500 bottles of hot sauce each hour. Huy Fong Foods was started 33 years ago by Vietnamese refugee David Tran, and the company, says Quartz, has never raised its wholesale prices. If the Sriracha factory is shuttered, supply and demand may do what Tran never did. Canada might have a strategic maple syrup reserve, but if Sriracha goes out of production, there’s no emergency warehouse waiting to be tapped.

If the price of Sriracha skyrockets, where will the heat-seeking foodie turn? For the New Yorker, Lauren Collins details how chili sauces have grown into a massive industry.

Chilis have become an attractive business. According to a report by IBISWorld, a market-research firm, hot-sauce production is one of America’s ten fastest-growing industries, along with solar-panel manufacturing and online eyeglass sales.

Unfortunately, it seems, based on Collins’ account, the so-called “chiliheads” driving the hot sauce boom have been in a bid to best each other on one metric alone, Scoville units, a measure of hotness. With manufacturers racing to abandon taste for sheer burn, we can only hope the city of Irwindale and Huy Fong Foods can work out their differences before our bottle is empty.

I put it in my chili, my eggs, on burgers, on turkey melts, in my queso dip.

I like the flavor of it but I suddenly can't tolerate the heat. It's the weirdest thing. Anything spicy is too hot for me now when I used to not have any problem. I had some of the Lays Sriracha chips recently and they were too hot. I had them before and had no problems. :shrug: I hope it switches back soon.

It's okay.. it's sort of become a real craze, and the flavor is only good on some things. I started shying away from Tabasco since it had a real strong, overpowering flavor, and to get my food hot enough with Sriracha, that's almost all I taste.

If I'm going to go with a mild sauce, I'ld rather a different flavor. Something like Datil peppers or something.

Never bought a bottle, never will.

It's the reason when I am out at restaurants I now ask for Louisiana or Mexican hot sauce.

Perfect in Chili, a great marinade with soy, rice wine vinegar, and ginger for damn near anything. It's perfect for eggs or egg burritos. It is the ultimate sauce, second only to soy sauce in its versatility. I use it at least 3 times a week for dinner dishes. I buy the huge gallon jug of it at the chinatown market in the river market.

I've usually enjoyed all of the Iguana brand hot sauces I've tried.

This one is about as hot as I'd prefer to go. I know there are hotter ones out there, but this will do the trick just fine.

The city knew exactly what they where getting into. They ****ing approved it! A YEAR ago!

The town I live in has a turkey processing facility. Sure, on a hot day you can smell it for a couple of miles around.

People have learned that that comes with the 1200 jobs it provides.

As well as the wife always having a healthy supply of mole (Dona maria + diced chiles + 1 spoon bacon grease + one spoon peanut butter) for the "cover all" gravy.

Mole reduced is great on everything from burgers to a dip additive to a nacho plate to roasted chicken breasts...

I use a nice amount of chili pepper, followed with a sprinkle of cayenne and white pepper. Gives it a nice flavor. The soy sauce and sesame or wok oil give it enough of a 'fried rice' flavor that you don't really notice the chili and pepper portion, except for the nice hint of spice.

I probably make fried rice with Gyoza once every two weeks. Good staple, throwing in chicken, shrimp, peas, corn, sauteed onion, and egg. Mmmm...

If I had sriracha at home, I would probably try it in the rice actually.

The one thing I use the hell out of sriracha in is Pha/Pho.

I went through a sriracha phase. Since moving to texas there is a much wider variety of southwest/mexican hot sauce. I picked up a quart of some for $.77 good stuff, water, chiles, vinegar, salt. that is it

It might be a good idea to stockpile Sriracha, because a judge in California has ordered the Huy Fong Foods Sriracha hot sauce plant in Irwindale, CA to cease any operations that cause irritating odors following a lawsuit filed by the city. The LA Times reports that the judge ruled in favor of the city, writing that the odor appears to be "extremely annoying, irritating and offensive to the senses warranting consideration as a public nuisance." While he did write that the smells tormenting the citizens of Irwindale could be "reasonably inferred" to coming from the factory, the judge also added that there is a "lack of credible evidence" linking the various cited ailments like burning eyes and headaches to the odors.

Though the injunction orders the factory to "cease any kind of operations that could be causing the odors" and that it "make immediate changes that would help mitigate them," it does not force a complete closure of the factory, nor does it specify what exact changes need to be made. While some chefs have already begun preparing for a life without Sriracha, it seems that next year's supply might actually be unaffected by the ruling since the chilis for the year's batch have already been ground. The ruling will go into effect as soon as it is signed, but the case might still go to trial.

I have friends though that were literally concerned about Sriracha not being available to them.

Interestingly, this may be something that launches Sriracha into the stratosphere of sales.

I've had bottles of Huy Fong in my arsenal since the late 80s. Back then, the only place you could find it was at the KC Farmer's market, where the Vietnamese stand put it out for Satays. Huy Fong has never advertised, but has steadily grown in popularity due to word of mouth.

This year, I've noticed two things, a shit ton of Huy Fong imitators, extending so far as McDonalds and Wendys, and these constant articles about the plight of the grand daddy of them all out in CA. Either the public will demand CA relent, or somewhere else [Phily has already enthusiastically offer] will give them a sweetheart deal to relocate.

I'm seeing a new era dawning of a much higher profile for Sriracha.

Eggs, meatball subs, marinara, stir fry, fried rice, French fries, hamburgers, ketchup, wings, barbecue sauce... use it on anything you'd use hot sauce in.

It's a dripper. It's good on scrambled eggs and goes great w/ sour cream aside maybe cheese enchiladas or something.

Nothing fancy, just a nice raw pepper taste, it's actually a rigid, dull sauce - but really works well when used with the right foods. I DID know a squirter once though, HOT brunette, about five yrs. older than me.

It's mildly hot [oxymoron, I know, but it is an accurate characterization], but strongly garlicy.

The single best thing for Sriracha, IMO, is eggs. Not a schorcher, but peppier than ketchup.

Also good on satay, and in ramen. Add it to other sauces [marinara, kung pao, ketchup, buffalo, etc.] for more pep.

Even good to dredge chicken nuggets through.

It's not a BAD smell like rotten eggs or trash, it's irritatiing, as it releases capcaisin, as in pepper spray. Burns the eyes and swells the throat in high enough concentrations.

In Bloody Mary's
Mixed with mustard for hot dogs
I add to certain red sauces for things like sausage and peppers
I put it in vegetable soup and other tomato based soups
On hamburgers as a booster with ketchup
In Vietnamese Pho soup
On meatloaf
In cocktail sauce for shrimp
On raw oysters


It is an awesome sauce that lingers due to the chili oil! :clap:

He was screaming obscenities and was removed from the store by management and a security guard. This was at the HyVee on Englewood and North Oak in the Northland. It was awesome.

30 day hold to see if bacteria develop in the product since it is not cooked about a certain temp. I toured a jelly factory once, they had the same thing.

valentina is great for a basic hot sauce. no crap in it either.

So, I paid more attention to Trader Joe's sriracha (dragon on the bottle) with some canned tuna just now and it has a definitively sweeter element, but is smokier, yet doesn't quiet pack the punch of Huy Fong. Decent substitute, but I prefer Huy Fong.

I just looked and I have a bottle of this in my fridge that I'm afraid expired back in August. It's likely been in there for years. For me, it doesn't have the scope and diversity of sriracha. I only used it for stir fries.

I use to think that Mexicans favored Tapatio. Then i met my wife and realized that mexicans actually favor Valentina. Every mexican household i've ever been in now....Valentina. Never fails.

I actually prefer the Sambal Oulek to sriracha sauce. It's hotter and has more of a rustic/crude texture with actual chili flakes in it than the smooth sriracha.

Vietnamese immigant guy started making it because he couldn't find any good hot sauce. He was convinced to sell it. Been doing the Sriracha business ever since.

I bought a bottle last weekend just because of this thread. Never had it before. It was quite good, and different than most hot sauces I eat. Not too spicy, but the chili stays with you and the garlic is great. I put some on my egg sandwich, friggin' awesome.

Hope this stuff stays around, as I just discovered it!

Last fall, residents complained that stinging fumes emanating from the factory caused asthma problems, heartburn, headaches, streaming eyes and nosebleeds. The complaints resulted in the factory being partly shut-down, but the problems persisted.

The Sriracha maker, Huy Fong Foods, is working with the air-quality experts South Coast Air Management District on improving its filtration system and is making progress, air-quality experts said.

The hot sauce Sriracha is Thai in origin but has become a popular condiment in many kinds of restaurants in the U.S.

I actually don't use any sauce at all, but I do like spices and almost all asian sauces. I don't use mustard, ketchup, relish, mayonnaise, nothing.WTF do you put on a ham sandwich? A hot dog? A brat? A burger?

Sriracha is sickening. I dont get the fad. It is one of the most terrible things my taste buds have ever encountered

BWillie always spouts shit that makes others think he's super high class. I as well would love to know what he puts on those items if he uses none of those condiments listed. Sounds like a fib to me.

No. I like sriracha. I make a pretty kick ass spicy ketchup that uses standard ketchup, whole grain mustard, and sriracha (or chipotle if you like a little smokiness), among other things.
