This is exactly why I have in my refrigerator for tonight. I used teriyaki and Worchestshire sauce. I'm also using my George Foreman grill.

My favorite quick meal is chicken breast dredged in panko [bread crumbs] with Francese sauce.

Lemon, Butter and White Wine. And the baked panko soaks it up perfectly.

Next time, remove the tenderloin portion and double butterfly the breast. That'll make it flat and even. Then, season with salt and pepper (or soy and pepper).

It should grill very quickly and still be juicy.

I cut the chicken breast down the middle and butterfly it out. Then I pound the chicken breast so it's the same thickness throughout the meat. Then I coat each side with olive oil, sprinkle a little salt and pepper and cook for the appropriate time. I think it's 8 min on each side off the top of my head.

I don't marinate it at all when I use the foreman grill.

Oh another easy way to bake chicken is to take a large piece of tin foil and create a boat. Put some Italian dressing in the bottom, place a frozen chicken breast inside, and put more dressing on the chicken so it's completely covered. Then i close the tinfoil boat and make sure nothing is leaking. Put the boat on a cookie sheet and throw it in the over for 45 min on 425 degrees. I do this when I don't have any thawed chicken breast. Easy to do at home or at work. Very easy cleanup.

In either case the box will have some knobs on it and a door on the front that opens by pulling it down.

George Foreman grill is shit. It's my best friend. Put 2 chicken breast in the foreman grill, take a quick shower. Chicken will be done in 9 minutes exactly, eat and go to the gym. My after work schedule. No need to flip the chicken. It's bad ass for a quick meal on a hurry.

Stove top is relatively fast. You could saute a chicken breast and make some kind of pan sauce in 20 minutes or so. Or you could cut it up with some veggies and do a stir fry in about the same amount of time. There is a trade off between fast and good.

If you want to cook chicken, then put salt and pepper on your chicken, grill it on the forman, then mix the soy with some brown sugar while the chicken cooks, reduce it down, and use it as a glaze.

Nah, in all seriousness, if I'm going to be anywhere more than a week, I'll find a room with a full kitchen so I can cook for myself. It doesn't take very long of nothing but restaurants and takeout to want something at home, even if it's just a can of soup.

Had this same meal last night.

Pound the breast to flatten it as others have mentioned. Cuts down cooking time exponentially.

Season with generous amounts of salt, pepper and Old Bay. Saute in a bit of oil on high heat in a cast iron pan.

You know what I used to do, and I'm sure people will think it's gross, but I used to just get a casserole dish. Put a bunch of water in it, some soy sauce, and some seasoning. Put the chicken breast in the microwave on high for about 5-7 minutes depending on the size of the breast and bingo. Cooked chicken breast. Don't need to grill. No clean up really. I did it all the time when I used to care what I looked like to get clean protein.

If you want a quick, easy chicken meal, get some seasoned salt and/or a pre-mixed rub (spicy montreal steak rub has worked well for me, or if you have a Penzey’s nearby get some northwoods seasoning). Use the foreman, or brown in a skillet and throw in the oven for a few minutes to finish.

Serve with some sort of rice dish, the ones you buy in the store that already have seasoning and can microwave.

Not my choice, but as quick and easy as it gets.

Just quick correction on one post though: You don't f*** a chicken to get a chicken, you need two chickens and get them to f***. Farming is really quite a bit more difficult than most realize.

We only had a small coop, but those chickens were restless. Nothing got on my ten year old nerves more than when one of those hens crapped all over the eggs. :banghead:

I used to read mens health all the time. I like the "a man, a can, a plan" meals. They were quick and fairly healthy meals you could do in about 10 minutes. For example, grill your chicken breast, add to it some canned white beans in chili sauce, and a can of diced green chilis, and you have poor mans white bean chicken chili in about 10 minutes.

Ok, I'm going to make a serious suggestion that I follow when I'm cooking for only me: cook once, eat 3 or 4 times. That way I can spend 30 or 40 minutes on a meal on day one and 5 minutes nuking it on the following days for an average of less than 15 minutes per day and eat tasty food instead of grilled chicken ala salt.

For example Southwestern chicken:

Slice 2 onions and 2 green peppers, saute in oil in an iron skillet until soft
Add minced garlic.
Add 3 diced chicken breasts, saute unit chicken is cooked through.
Add a can of drained chopped tomatoes
Add canned chipotle chilis to taste.
Salt and pepper to taste.

Heat some black beans for a side.

Boom you have a healthy and tasty meal in 30 minutes and you can eat the leftovers for the following 3 days. Then you could do an Asian version and chow on that for 3 days.

Cut the chicken into strips/chunks.
Cut the pepper and onion into strips/chunks.
Add ~1/4 cup oil to a pan/wok.
Cook chicken, pepper, onion until done. Add water if it gets dry while cooking.
Dump in noodles/rice/chow mein into the pan/wok with the already cooked stuff, and cook the packet stuff per the instructions.

You can make this in less than 20 minutes easy.
