During my entire childhood, all my female relatives were great soup makers and had their own special signature dish. Every one of their soups were hearty and chunky, not like the stupid puree shit they serve today in most restaurants.

With this awful cold weather and so much snow, I was thinking about all the wonderful bowls of soup they served me over the years growing up from somewhere around 5 years old until 25.

Lentil Soup, Split Pea with Ham, Navy Bean with Bacon, Manhattan Clam Chowder, Garbage Soup (Vegetable based with everything; green beans, peas, carrots, potatoes, corn, onions, tomatoes, beef pieces and broken noodles in a great tomato and beef broth), Chicken Noodle Soup with Mueller's Egg Noodles, Southwestern Corn Chowder, hearty Potato Soup, and Beef Barley.

I also got Lipton's instant cup of soup during high school lunch break cause it was so quick and easy.

So what is your favorite soup and when was the last time you had a bowl?

Thai Spicy Coconut Tomato
Regular Tomato with shredded cheese and croutons.

That's about all I really get excited about, though I'll eat all manner of soups put before me.

My wife makes it. I'll have to ask her. It is so good my oldest daughter asks for it for her birthday dinner.

I see a bunch of sauerkraut soup recipes on the the web, but they all look pretty nasty---well, nasty compared to my wife's soup (it is a family recipe).

My aunt isn't renowned as a chef, I mean she's a good enough cook and all, but she makes all world dumplings. Only C&D I've had that came close was AQ Chicken back in the 70s, and that might even be a bit nostalgia tinged.

nothing beats spicy chicken andouille sausage flashed in a pan eventually added to a mix of Great Northern Whites, Kale and vidalia onions, chicken broth, bacon backdrop.

You can say and wind up pretty darned close: "I'm around the 7th best cook on CP." Give or take a poster/position or two.

it's been said here already, but i made a kick ass chicken and dumpling soup a few months back. dem dumplins were a knockout!

Etouffee is a stew which is kind of a soup. I like all kinds of soups. Make a lot of chicken stuff. I don't know what I'm doing but it always tastes good.

You are missing out on one of the greatest soups ever imported to the US. When done right with the correct broth and fresh meat, it is absolutely one of my favorites. I just had some last week.

This is the photo. I get it with a mango smoothie to cut the heat from all the Sriracha I add. It fills you up and warms you to your core.

I do like Baked Potato soup with bacon and a mound of shredded cheese on top.

or Split Pea soup with ham or tasso in it.

Chicken and dumplings is love in a dish. Chicken noodle soup..the slow all day kind with fresh noodles, carrots, onion....so much good, Italian wedding soup with a bazillion meatballs.

Soup can't be beat thats for sure.

I love soups, and I don't think I could name a favorite. I've been having mostly chicken soup this winter, because I caught a pretty bad cold that's hung around longer than it should have. It may be time to do the rounds again, now that this thread is here.

Hamburger soup
(French style) Onion soup
NE clam chowder soup
Lobster bisque
Tortilla soup
Albondigas soup
Kale/Portuguese soup
Minestrone soup
Sausage and lentil soup
Beef stew
Octopus stew
Gumbo


That seems like a pretty good way to finish off a cold winter. Thanks for the inspiration.

Lots of people buy chicken or beef stock in those cans or nasty boxes. Its all dreck. I make my own stock and keep it in the freezer. Here is a link to an excellent description of what makes a really good rich stock.

Just an ice cold mango smoothie. Not a huge fan of bubble drinks and at my favorite dim sum place, I always tell them "no bubbles"

I've got about 30-50 pounds of beef bones in my freezer, just waiting to be made into stock. I'm waiting until I get enough chicken bones to do the same thing, and then I'm going to make a weekend of it.

I love beef stock made with the beef bones good and roasted and brown. Man what flavor.

I do seafood stock too. Save all the shrimp shells.

No. But I learned to cook when I lived in Houston. There are a lot of cajun influences in my style. Tex-Mex & Asian too. I do a lot of fusion.

13 Bean soup made with Rotel, fatback, and some smoked sausage. The trick is to cook the soup until the beans start to disintegrate.

Green Pea soup, not split pea with ham but real green pea soup.

Curry Turkey soup with acini de pepe.

Chowders tend to be my favorites.

I think I've come about as close to perfection on my New England clam chowder as I can get. What finally put me over the top was a Serious Eats recipe that has you cook everything, then strain out the solids and blend the liquid base to create a rock solid emulsion between the fat and the milk. I also make a mean crab and corn chowder.

I'm also big on chili (my recipe is one of only a select few I don't give out).

IMO, the single most important factor to a good soup is a good base, so I always try to use a homemade stock or broth.

Speaking of the OP, I've had some bisques lately and have really come to love that style. The texture and the pure flavor can be sooooo good.

Last night, we had a sausage and kale soup that was similar in style to the Olive Garden's zuppa Toscana. It was thick, hearty and tasty, which was perfect for the night of snow shoveling.

I've traveled the world and have eaten at nearly every type of ethnic restaurant, yet I never heard of Albondigas soup until this thread.

Thanks for the introduction and I'll keep an eye out for it next time I'm in a Mexican or Hispanic restaurant so I can try it out. :thumb:

On a side note, here is what looks to be a great recipe for all us who never knew or made this soup before.
