View Full Version : Food and Drink The best fried chicken?

Msmith

I am talking about national eateries, like if you drive for miles and have an urge to eat some fried chicken, which one place do you choose?

Aside from that, what is the best fried chicken you ever had, homemade or in restaurant?

By the way, all fried chicken lovers rejoice for this news (http://finance.yahoo.com/news/eat-fried-chicken-want-174400647.html)!!!

The only beef I have about fried food, (actually is from my wife) is that the shortening that is used. Some stores only change the shortening once a week.

Chicken Annies or Chicken Marys in Pittsburg, Ks. It depends on the day which one is best. I like the spicier of the two, I think that is Annies but you cannot go wrong with either one. Awesome Onion Rings too.

My favorite chain fried chicken is KFC Original Recipe. I know most people prefer Popeye's though.

For stand-alone places, there's a place near my house called Babe's that I think is pretty awesome.

I can't begin to tell you what a childhood memories BOTH of those places are/were.

BTW, have you ever read Annie and Mary's story? I think they're the temple in the mid west regarding fried chicken. I doubt there's better, well I doubt there's places with that sort of history - Both of them have survived two financial depressions. I love Mary's german pot salad - also the fact that they have that spaghetti option (as a side) --- Amazing just how well meatless spaghetti w/ red sauce goes w/ fried chicken. Who would have thought it?

Annie's actual chicken is better - but Mary's side items are better.

They're fairly comparable.

Oh wow yes the German Potato Salad and the German Slaw, the spaghetti, all good. One of them used to have this awesome homemade applesauce, it wasn't like the grindy yellow stuff you buy in stores. It was red and chunky. The past few times I have been there and ordered it, it was not like it was, so they probably changed the recipe. But wow, that spagetti does go damn well with it.

My Uncle introduced us to CA's and CM's (may he rest in peace) - he was an antique dealer - he owned greenhouses - he also had a dental lab in his garage.

He was pretty known around Pitt. I bet someone here remembers SOMEthing about that guy - or knew him. His bourbon habit is what got him, though.

Very sad - RIP Uncle Harry.

I ate at the one on the south west side of town one time. It was good but I guess after alll the Whooptydo I was a little disapointed that it was just good. Perhaps I should try it again. I drive right past it often on the way to my playce at Grand Lake and have a kid at PSU.

The homemade fried chicken mostly done in pan which is wholesome but contains a lot of grease. I wonder if baking in oven is good as fried in the pan. Many public eateries offer boasted chicken, yet there is certain difference in taste wise. For example, Walmart's chicken is dry. KFC's is meh. Golden Corral's is okay. The one I ate in Shipshewana was good though.

The best I've ever had, bar none, is from a little ol' lady in Baton Rouge, LA. She previously owned a couple restaurants near LSU, but a few years ago packed up and now cooks by appointment only out of her home. Her name is simply "Mama."

My first trip there, three other guys and I were on a fold-out card table in her front room. She served fried chicken, mustard greens, red beans and rice, gumbo, mashed potatoes/gravy, corn bread, and bread pudding, and it was one of the greatest overall meals I've ever had, but that chicken - nothing even comes close to it.

I was there with some colleagues, and when the Baton Rouge guy made the reservation, he was sure to tell her that we needed "a real receipt, Mama." When he hung up the phone, he said, "I usually pay Mama with cognac."

I'll add, when I was there a couple weeks ago, she was giving out her fried chicken recipe... these were the totality of the instructions: First, you gotta pray over the chicken. Then, you use "the regular amounts of seasonin'," and you must use fresh chopped garlic.

The best fried chicken I've ever had was at a soul food joint called Three Friend's Restaurant in KCMO. It was on Prospect around 25th street. It closed a few years ago and people cried. I think they were only open three days per week. All their food was great, but I loved the fried chicken with sides of mac/cheese and collard greens.

For nationwide fast food fried chicken I'll take Popeye's.

There's flavor in that old oil. That's why there are some restaurants that pride themselves on using old oil. Look up Dyer's in Memphis - they claim they're re-using 50-year-old oil (strained every night, obviously).

Chicken Annies or Chicken Marys in Pittsburg, Ks. It depends on the day which one is best. I like the spicier of the two, I think that is Annies but you cannot go wrong with either one. Awesome Onion Rings too.

Best chicken in the world. The German Coleslaw is the tits.

I got those about 3 weeks ago, 5 for 2.99? Tasted great at the time, next day, ring of fire, literally crapped blood and I have an iron gut. I think they were freezer burnt from sitting in storage.

The only beef I have about fried food, (actually is from my wife) is that the shortening that is used. Some stores only change the shortening once a week.

I've been on record how good the practices were at the Hardees where I worked in HS.

Shortening lasted three days there. Three friers, first fries only, second fries and has rounds, third chicken sammiches. The third frier gets tossed, first gets fresh each moves down a rung.

My only complaint, they made us take the third frier shortening to waste disposal before it was cool. My buddy and I were carrying the bucket, some of it splashed on his forearm, and he ran off leaving me with a bucket-load of hot grease at my feet. 2nd degree burns kept me out of 4 weeks of my senior soccer season.

As for fried chicken, can't stand any chain outside Popeye's. Can't stand dark meat, can't stand anything less than piping hot. All I can taste is grease otherwise.

Even Popeye's is a disguise to get me some red beans and rice. Cajun sparkle, McIlhenny's, red beans, and rice. Foundation of any great meal.

Yes, and it's not even a contest. Honorable mention to Willie Mae's Scotch House in New Orleans though. Their sides are better than Gus's.

Rubys Soul Food in KC in the 80s and 90s man it was good. When we worked near that area it was a must eat. After that the original Strouds before it got torn down for the Little Blue Trace flood control project. Strouds Oak Ridge Manor up North aint bad.

For quick chicken Go Chicken Go by Rockhurst College is pretty darn good. The fried livers and gizzard with gravy dippin sauce were good. That stuff was deadly when you had to go back to work outside in the heat 95 with 60% humidity.

I think the neckbones in Ruby's BEPs were from a pig. It was a side-track in a chicken thread. I just remember Ruby watching me eat. She would load plate after plate until I could not eat another bite.

The best chicken I've had at a chain was from Los Pollos Hermanos. Man, that stuff was good. I just grabbed a four piece and soda value meal. The cashier kept going on and on about how I could get something good on the side but didn't really mention exactly what so I stuck with the combo. I guess they have their own proprietary drink called "Blue Sky" because the cashier was pushing that too but I wanted a grape drink. I can't get it out here in NorCal though. I stopped in during a trip through Nevada. I'm not sure what spices they use. I heard that the owner was from somewhere in South America so maybe it's Spanish?

Ok, we must have hung out together years ago. My vote would be Go Chicken Go, followed by Strouds. the wife and I did Strouds on Valentines day for dinner, good as ever. I hit Go Chicken Go for gizzards and hot sauce with that little square butter soaked bun and usually grab a two piece also. If you live in or near KC, and haven't tried it, try Go Chicken Go. I'll also add that Ruby's was great. She would often come around and look at your plate when writing up your check. If you had a clean plate, your meal would be $6 or $7. If you left food on your plate, she'd charge you $8 or $9. heh

I think Stroud's, when it's on its game, is better for chicken. But my dad LOVES RCs. Might have to do with his union having so many of their meetings there for years, I dunno. But he rarely pipes up on where to go when we're deciding to go out out eat, unless he gets a hankering for RCs.

Went to Southern next to Pappy's by SLU this weekend. Place is God Damned modern miracle. Somehow, each of their offerings have a 'little' tweak that makes it disinctive and delicious. A certain spice that no one else includes, a certain texture that lingers on your tongue and in your reveries.
From their chicken [I stepped up to cluckin' hot, and it was HOT!!] all the way down to the pickle slices, everything tastes like it could only come from there.
It's inspiring and maddening at the same time, because the food is delicious yet you know you have no way of replicating it at home. And further, it's hard to put into words, because you can't quite place what makes it so delicious.
For instance, the Hoppin' John has some green shoots in it that gives it an absolute ZING! Not hot, yet not mild, strong and distinctive, but you can't just say 'oh, that's collards, or lemongrass, or xxx other aromatic. Just a little bit of 'weed' that makes the entire bowl of mundane peas and rice delicious.
I have a sneaking suspicion that the flavor of the mashed potatoes is influenced by some reduction of celery and cream, but again I'd be endless weeks in the kitchen replicating it.

Deviled eggs, pickled beets, mac'n'cheese. All perfect.

The pickle slices taste simultaneously like the perfect pickle for the meal, and like no other pickle you've tasted before, again down to the particular mix of spices and aromatics.

And the chicken, holy hell. It's that type of hot that is unambigious, but totally addictive. It doesn't sneak up on you. It's not masked by sweetness. It's not vinegary or garlicy. It's straight up Bhut Jalokia slow simmered in butter and oil, then the chicken comes right out of the fryer into the concoction. Not that there isn't already a ton of spice rubbed into the meat and mixed into the coating beforehand.

It's a tiny place, and it takes a bit because every order is cooked fresh, but man. It's more than a meal. It's an experience, leading to a lifetime of memories.

Another pic to give you an idea of how the chicken comes together.

http://i.imgur.com/vvZPwTm.jpg

Secret tip, they'll give you an extra little cup with the final 'dip' of heat they dunk the chicken in [we'll call it chili oil], and you can take it home with you with the bread under, and it's great to toast the bread and dip it in the sauce, to go with any leftovers you have.

Also, just look at the presentation they put into a side of deviled eggs [they top them with a slice of pickled okra, don't know why they're not in the picture].

Sounds like what Gus' in Memphis does. They fry the chicken, then take a ladle of the fry oil, toss in some cayenne, and then toss the chicken in the oil. Some of the best I've ever had.

I love fried chicken, but it's such a mess to make.

Eh, it's St. Louis. All the difference in the world between 'in danger' and 'near danger.'

They're a block from The Fox theatre and less than that from SLU main campus. Their entire backside abuts a high school football field.

They close as early as they do because, like Pappy's they cook and serve until the stuff they made fresh that day runs out.

Another pic to give you an idea of how the chicken comes together.

Dude, if you're talking about my leftover bread/sauce tip. Sure it's bread and oil, but when it's as spicy as that you're not getting calories out of the bargain.

One chicken wing and one slice of bread and you won't want to eat anything the rest of the day. And even if you did, your mouth would be in such and uproar it would go on strike. ;)

Not to mention, the spice likely sends your metabolism through the stratosphere.

A new fried chicken place opened up about a block from my house. I was pretty excited to give it a try and finally got to it last week. It was pretty good, even though the proportions were pretty small. It annoys me when I get two side dishes, and then when I get home my "side dishes" are in those little condiment containers. Can you give me an actual serving, please?

The good news is that they serve french fries. I now have access to french fries one block away. How cool is that?
