Seriously, I'm trying a crock pot easy version tonight since it'll just be my wife and I this year.

Last year, I went all in on a totally homemade lasagna with fresh pasta. Not exactly traditional, but it was freakin' amazing.

You have a large crock pot or you are going to cook a small size turkey?

Normal crock pot could only go up to 300 degree. The covered turkey will be moist and flavored. But I don't think the skin will be browned enough.

ptlyon
11-06-2014, 02:04 PM
You could try it in an oven bag in da crock

I've had enough of Mrs. "Just A Dash of Salmonella" Donger's Thanksgiving dinners.

Since it's just me and Mrs. FMB!, just doing a couple thighs on top of pre-seasoned stuffing, onion, celery, and dried cranberries (with some chicken stock for moisture). I seared the skin, and I'm planning to throw it under the broiler to crisp it up tonight. If the broiler doesn't crisp it, I'll just throw the skin out - a lot of that fat will render into the stuffing for drippings/flavor.

I like to make a Scarborough Fair turkey on the smoker.

Stuff the bird with Italian Parsley, Sage, BBQ Rosemary and ENGLISH Thyme. Ghee and minced garlic rubbed all over the outside. Maple smoking wood.

I currently have a 10lb. picnic shoulder brining that will be ready for the smoker on Thanksgiving Eve. Home made ham for turkeyday and a turkey for Xmas this year.

Brine
Rub
Smoke

The best is capturing the drippings in the smoker and making the gravy, all smokey and shit. That gravy will save any side on the plate that someone else may have fucked up.

If you're one of those heathen bastards who refuse to use the bird's cavity to make stuffing, you could spatchcock the turkey and cook it on top of a layer of vegetables. That will both lessen cooking time and allow you to use the turkey back to make a homemade gravy, instead of being limited to just the neck and giblets.

Pretty traditional for me, bake low and slow that is the tempo, covered and remove the foil covering for the last hour or two to crisp the skin... basting with pan juices every time I think about it.

Dont like my stuffing in the actual turkey so that out, dont have a turkey fryer so thats out, dont want a bunch of exotic spices on a traditional dish so thats out... poultry rub, black pepper, baste often and profit.

I try to make a turkey about once a month, and I often have turkey parts (usually thighs) at another point in the month. Yummy goodness.

I made a turkey on Tuesday, as a matter of fact, in honor of it being election day.

We'll do our normal smoked turkey. We serve both garlic mashed potatoes and buttery mashed potatoes. Too many other sides and food too mention. It's mostly about family, but the food is damn good.

Here's ATC with a brine and spatchcock prep for a chicken. You'd have to go bigger for a turkey, obviously, but the basics would be the same.

Wet Brine
Stuff with apples, oranges, celery and onions.
Butter mixed with fresh parley rubbed under and on top of the skin
baked for 1st hour without foil on top. Rest of time will have foil on top until it reaches internally about 160-164 degrees

It came out amazing. The chicken was juicy and perfect. The skin was nice and crisp and crackly. The potatoes underneath were phenomenal. I'm not a potato fiend; however the wife is. She loved them.

Pretty simple stuff, just had to allocate a little extra time to brine, but it was oh so worth it.

My turkey recipe is buy one organic one, brine ( thyme, juniper berries, bay leaf, black pepper and garlic) and pop it in the oven. I might do the same brine but with apple cider and some brown sugar this year.
